Banana Kofta and Pineapple Curry

banana kofta and pineapple curry
Healthy kofta made with row banana mixture and served with delicious pineapple curry.

Ingredients
For koftas
Green plantains                         4 nos.
Red chilli powder                       ½ tsp
Cinnamon powder                      ½ tsp
Turmeric powder                        ½ tsp
Asafoetida                                ½ tsp
Finely chopped ginger               ½ tsp
Finely chopped coriander           5 tsp
Grated fresh coconut                 2 tbsp
All purpose flour                        2 tbsp
Salt                                          to taste
All purpose flour                         for coating
Oil                                            to fry
For curry
Olive oil                                     3 – 4 tbsp
Dry red chilli                              2 – 3
Mustard seeds                          1 tsp
Cumin powder                           ½ tsp
Fennel seeds                            1 tsp
Cloves                                      8 – 10
Green cardamom                       5 – 6
Curry leaves                              8 – 10
Finely chopped ginger                2 – 3 tsp
Finely chopped onion                 1         
Grated fresh coconut                 ½ cup
Turmeric powder                        ½ tsp
 Red chilli powder                      ½ tsp
Cinnamon powder                      ½ tsp
Khoya                                       2 – 3 tbsp
Finely chopped pineapple           1 cup
Grated jaggery                          1 tbsp
Salt                                          to taste

Method
To prepare koftas
First peel and grate the plantains in a mixing bowl.

Then add red chilli powder, turmeric powder, cinnamon powder, asafoetida, ginger, chopped coriander, grated coconut, salt and mix.

Then add all purpose flour and mix well.

Now make balls of the mixture and coat with all purpose flour and keep aside.

Heat oil in a pan and deep fry the balls till golden brown then remove and keep on tissue.

To prepare pineapple curry
Now heat olive oil in another pan, add dry chillies, mustard seeds, cumin, fennel seeds, cloves, green cardamom, curry leaves, ginger chopped and stir.
Then add chopped onion and stir well and add grated coconut and stir well.
Once cooked, add turmeric powder, red chilli powder, asafoetida, dry ginger powder, cinnamon powder and mix well.

Add water as required and stir well, then add khoya, jaggery and mix well.

If required then add more water then add salt, chopped pineapple and cook for 7 – 8 minutes.

Then place the fried banana koftas in serving plate and pore the cooked curry.

Garnish with chopped coriander and serve.

Karela Sabzi / Bitter Gourd Curry

karela sabzi or bitter ground curry 
It is a popular north Indian dish for bitter gourd lover. This dry sabzi is very easy to prepare with easy available ingredients. Best match with white rice or rooti.

Ingredients
Sliced bitter gourd                     1 cup
Sliced onion                              1 cup
Red chilli powder                       1 tsp
Coriander powder                       ½ tsp
Finely chopped tomato               1 cup
Finely chopped green and
red chilli                                    1 tsp
Peanut powder                           2 tsp
Grated coconut                          1 tbsp
Water                                        as required
Salt                                           to taste
Oil                                            3 tbsp
For garnish
Grated coconut

Method
Heat oil in a pan, add sliced onion and sauté till light golden.

Then add coriander powder, red chilli powder and mix well.

Add finely chopped tomato and stir well then add chopped red and green chilli.

Now add sliced bitter gourd, salt and mix well and add some water and cook till bitter gourd becomes soft.

Then add peanut powder and grated coconut and mix well.

Serve the bitter gourd curry and garnish with grated coconut.

Bharwan Karela / Stuffed Bitter Gourd

bharwan karela or stuffed bitter gourd
It is a delicious dish with least fevourite vegetable bitter gourd. Stuffed healthy bitter gourd with tasty potato, bell pepper, peanut fillings and served with yummy gravy. Very easy to prepare so try it.

Ingredients
Bitter gourd                               3 nos.
Oil                                            to fry
For stuffing
Parboiled and grated potato        ½ cup
Peanut powder                          3 – 4 tsp
Mava                                        1 tsp
Salt                                          to taste
Coriander powder                      1 tsp
Red chilli powder                       1 tsp
Turmeric powder                        ½ tsp
For batter
Gram flour                                3 tbsp
Salt                                          to taste
Red chilli powder                       ½ tsp
Water                                       as required
For gravy
Ginger-garlic paste                    2 tsp
Onion paste                              1 cup
Red chilli powder                       1 tsp
Coriander powder                       1 tsp
Tomato puree                            1 cup
All ground spice                         1 tsp
Water                                        as required
Salt                                           to taste
Oil                                             3 tbsp

Method
First peel the uneven portion of better gourd and slit lengthwise.

To prepare the stuffing
Take a mixing bowl, add parboiled and grated potato, peanut powder and mix well then add mava.

Add turmeric powder, coriander powder, red chilli powder, salt and mix well.

Now stuff the bitter gourds with this prepare mixture.

Heat oil in a pan for deep frying.
To prepare batter
In another mixing bowl add gram flour, red chilli powder, water, salt and mix well.

Now coat the stuffed bitter gourds with this batter and deep fry them until brown.

Remove and keep on tissue.
To prepare gravy
Heat oil in a pan, add ginger garlic paste and sauté then add onion paste and cook well.

Add red chilli powder, coriander powder, tomato puree and stir well then add little water and cook well till oil comes out.

Then add some more water, all ground spice and mix well.

Now pour some gravy on serving plate then place the fried bitter gourd on it and pour remaining gravy over them and serve.

Karela Wafers / Bitter Gourd Wafers

karela wafers or bitter gourd wafers 
Bitter Gourd the least favourite vegetable now will be in your favourite list with this easy to prepare recipe.

Ingredients
Sliced bitter ground                   1 cup
Lemon juice                              1 tsp
Red chilli powder                       ½ tsp
Chat masala                              ½ tsp
Salt                                          to taste
Rice flour                                  2 tbsp
Oil                                            to fry

Method
First peel the green uneven portion. Now to reduce the bitterness of bitter gourd, soak them in salt water.
Then cut them in long thin slices.

Take a mixing bowl, add bitter ground slices, lemon juice, chilli powder, salt, chat masala and mix well.

Then coat them with rice flour.

Heat oil in a pan and deep fry the coated bitter ground slices until dark brown and crispy.
Remove on tissue.

Tinda Green Curry

tinda green curry 
Tinda curry is a healthy, simple and tasty dish of  cook in green paste coriander leaves mixture.

Ingredients
Chopped apple gourd                  1 cup
Cumin seed                               1 tsp
Turmeric powder                         1 tsp
Salt                                           to taste
For green paste
Chopped ginger                         1 tbsp
Chopped garlic                          1 tbsp
Chopped green chilles               1 tbsp
Finely chopped coriander           1 cup
Desiccated dried coconut           1 cup
For garnish
Fried dry  red chilles

Method
To prepare green paste
Put chopped ginger, garlic, chillies, coriander, coconut in a blender and  make a smooth paste.

Heat oil in a pan, add cumin seed, chopped apple gourd and sauté well.
saute the chopped apple gourd with cumin 
Then add salt, turmeric powder and stir well.

Now add the prepared green paste and mix well.

Add water, salt and cook well until apple gourd become soft.
add water and cook 
Serve it in a bowl and garnish with fried dry red chillies.

Tinda Masala / Round Gourd Vegetable

tinda masala/round gourd vegetable
Punjabi tinda is a healthy, spicy, tasty and it is very easy to prepare the round gourd vegetable.

Ingredients
Finely chopped apple gourd       1 cup
Ginger garlic paste                    1 tsp
Finely chopped onion                1 cup
Finely chopped chilli                  ½ tsp
Finely chopped tomato              1 cup
Turmeric powder                        ½ tsp
Red chilli powder                       1 tsp
Coriander powder                      1 tsp
Salt                                          to taste
Water                                       as required
Oil                                           1 tbsp

Method
Heat oil in pan, add ginger garlic paste and stir.
Then add chopped onion and chilli and stir until golden.
saute onion with chilli and cumin
Add chopped tomato and stir well.

Then add turmeric powder, red chilli powder, coriander powder and cook the masala with little water till oil separates.

Now add chopped apple gourd, salt and mix well.

Add some water and cook until water dries up.

Serve in a bowl and garnish with sliced lemon.

Turai Amchoori / Jhinge Amchoori / Tasty Ridge Gourd

turai amchoori/jhinge amchoori/tasty ridge gourd
It is a very simple but yummy vegetarian dry type dish of ridge ground.

Ingredients
Peeled ridge gourd                    1 cup
(cut in weeben)
Corn flour                                 1 – 2 tbsp
Salt                                          to taste
Dried mango powder                  1 tsp
For tadka
Cumin seeds                             1 tsp
Dried red chilli                           3 nos.
Sliced onion                              1 cup
Sliced tomato                            1 cup
Dried mango powder                  1 tsp
Salt                                           to taste
Oil                                            1 tbsp
For garnish
Coriander leaves

Method
Take a mixing bowl, add peeled ridge gourd, corn flour, salt, dried mango powder and mix well.

Then put them in hot oil one by one and deep fry until golden brown.

Heat oil in another pan, add cumin seeds dry red chilli and stir.

Then add sliced onion and sauté.
