Corn Fritter with Tropical fruits

Traditional corn fritter made in easy way and served with fresh tropical fruits.

Ingredients
For corn fritter
Boiled corn                               2 cup
Sugar                                       3 tbsp
Coconut milk                            1 cup
Baking powder                          1  tsp
Corn flour                                  2 – 3 tbsp
For tropical fruits
Finely chopped strawberry          1 cup
Finely chopped pineapple           1 cup
Milk                                          2 tbsp
Olive oil                                     2 – tsp

Method
To prepare corn fritter
Take a blender, add boiled corn, sugar and blend.
Then add coconut milk and blend again.

Remove the corn mixture in a bowl, add baking powder, corn flour and mix well and make a batter and keep aside.

Now heat oil in a pan, put some batter on it and spread in round shape.

Cook it from both sides till golden brown.

Remove and cut in four pieces and place on serving plate.

To prepare tropical fruits
Chop strawberry, pineapple and put in a bowl, add milk and mix well.

Now add the prepared fruit mixture with corn fritter and garnish with chopped strawberry.

Tartar Sauce

Tartar sauce (tartar in the UK, New Zealand and Australia) is a mayonnaise-based thick white sauce. It made with mayonnaise, dill pickles, capers, mustard paste, shallots, gherkins, parsley and lemon juice. Perfect for serving with fried fish or chips.

Ingredients
Chilled soya milk                       1 ½ cup
Lemon juice                               ¼ cup
Salt                                           to taste
Mustard paste                            2 tsp
Finely chopped shallots              ¼ cup
Chopped capers                         1 tbsp
Gherkins                                    ¼ cup
Chopped parsley                         1 tsp
Lemon juice                                2 tbsp
Crushed black pepper                  to taste

Method
In a glass put chilled soya milk, lemon juice, salt, 1 tsp mustard paste and blend well with hand blender.

Now slowly add vegetable oil and blend till the mixture thickens.

Then remove the thick mixture in a mixing bowl, add remaining 1 tsp mustard paste, chopped shallots  chopped capers, chopped gherkins and mix well.

Add parsley, lemon juice, crushed black pepper, salt and mix well.

Serve the ready tartar sauce with crumbed fried baby corn and cucumber slices. 

Garlic and Parsley Bread

The tasty bread made with big loaf, baked it with smeared garlic butter parsley mixture. It is an excellent accompaniment with any soup.
 

Ingredients
French loaf (baguette)                1
Butter                                       200 gms
Garlic finely chopped                 20 cloves
Fresh parsley finely chopped      2 tbsp

Method
First slice the baguette diagonally without cutting through.

Take a mixing bowl, add butter, garlic, parsley and mix well.

Now apply this mixture between the slices.

Then wrap the loaf in aluminium foil bake it in 180 degree celcius preheat oven for 15 minutes.

Serve with laksa or any soup.

Tomato Bruschetta

Bruschetta is traditional Italian dishes in which small bread slices are topped wipe 3 types of tomato, pesto sauce, parsley and mozzarella cheese.

Ingredients
Finely chopped garlic                ½ tsp
Chilli flakes                               ½ tsp
Crushed black peppercorns       1 tsp
Finely chopped onion                1 – 2 tbsp
Chopped tomato                       1 cup
Chopped green tomato              1 cup
Chopped cherry tomatoes         1 cup
Chopped capsicum                   1 tbsp
Oil                                            1 tbsp
Bread slices                              3 nos.
Grated cheese                           as required
For garnish
Parsley
Pesto sauce

Method
Heat oil in a pan, add finely chopped garlic, chilli flakes, crushed black peppercorn and stir well.

Then add finely chopped onion and stir well.

Add chopped tomato, chopped green tomato, chopped cherry tomato and chopped capsicum and mix well.

Then cut a bread slice in pieces.

Place them on baking tray and put the tomato mixture on bread pieces.

Then add grated cheese on them.
Now heat it in oven for 2 – 3 minutes.
Take out from oven and serve on plate and garnish with parsley and pesto sauce.

Dudhi na Muthia

dudhi na muthia
Lauki or Dudhi or Bottle Ground na Muthia is a nutritious and a tasty recipe of Gujarat made with steam. It can be served it in the morning as well as in the evening. This classic Gujarati breakfast dish made from healthy bottle ground, dalia, semolina, sesame and other ingredients.

Ingredients
Bottle ground                            500gms
Dry mango powder                    2 tsp
Sugar                                       2 tsp
Roasted semolina                     2 tbsp
Dalia roughly paste                   3 tbsp
Salt                                          to taste
Turmeric powder                        3 tsp
Red chilli powder                       3 tsp
Sesame seeds roasted              4 tsp
Curd                                         2 tbsp
Oil                                            2 tsp
Green chilli                                4nos
Desi ghee                                 1 tsp
For tadka
Desi ghee                                 2 tbsp
Mustard seed                            1 tsp
Red chilli powder                        2 tsp
Curry leaves                              10 – 12nos

Method
Take a mixing bowl, grate the bottle ground and put in bowl and add dry mango powder.

Then add sugar, roasted semolina, dalia, salt.

Add turmeric powder, chilli powder, roasted sesame seeds, curd and mix well.

Now grease a banana leave and put inside steamer.
Give shape to lauki or dudhi or bottle ground mixture and place in steamer.

Take another mixing bowl, add slit chilli, sugar, turmeric powder, chilli powder, ghee and mix well and place in steamer with dhoodi muthia.

Then cover and cook for 15 to 20 minutes or until cooked.
To prepare tadka
Heat ghee in a pan, add mustard seeds, when it starts to crackle add red chilli powder, curry leaves and stir and off the oven.

Now put banana leaves on serving plate and serve the steamed dudhi  muthia on it with chillis.

Moong Dal Hummus

Normally hummus made from chick peas here it made with golden gram.

Ingredients
Soaked moong dal                    200 gm
Tahini paste                              1 tbsp
Chopped garlic                         1 tbsp
Lemon juice                              ¼ tsp
Olive oil                                    400 gms
Red chilli powder                       1 tsp
Salt                                          to taste
For garnish
Green olives                              as required
Cucumber and carrot salad         as required
Olive oil                                     2 tsp
Red chilli powder                        a pinch
           
Method
First boil water and add the soaked moong dal into it, blanch for 1 to 1 ½ minutes.

Then stain it.

Take a mixer, add stained moong dal, tahini paste (if tahini paste is not available then use white sesame seed paste), chopped garlic, lemon juice and keep blending.

Now keep adding the olive oil and keep blending with the mixture.

Then remove the mixture in a bowl.
Add lemon juice, red chilli powder, salt in mixture and mix well.
add remaining ingredients into humus 
Serve it in a bowl, keep olives in a bowl, place the cucumber and carrot salad.

Pesarattu Waffle

A Telugu cuisine Pesarattu or childaa is crepe-like bread that is similar to dosa which is made with batter of green gram (moong dal).
A typical American breakfast waffle is a leavened batter or dough cooked between two plates, patterned to
give a characteristic size, shape and surface impression.
So here the waffle made in Indian style with green gram and served with pineapple mixture.

Ingredients
For waffle
Soaked rice                              1 cup
Soaked green moong                 1 cup
Asafoetida                                 ½ tsp
Finely chopped onion                 2 tbsp
Oil                                            1 tsp
Salt                                          to taste
For pineapple and tomato mixture
Oil                                            1 tbsp
Curry leaves                              7 – 10 nos.
Diced pineapple                         1 cup

Method
To prepare pesarattu batter
Take a mixer, add soaked rice, soaked green moong, asafoetida, salt and blend well.

Now remove this mixture in a bowl.

Then add salt, chopped onion and mix well.

Rest this mixture for 15 – 20 minutes.
To prepare pineapple tomato mixture
Heat oil in a pan, add curry leaves, diced pineapple, diced tomatoes, salt, lemonjuice and toss then off the oven.

To prepare waffle
Heat a waffle maker and put little oil then pour the batter in two portions and cover it.

Once cooked open the cover and remove them.

Now arrange the prepared fruit mixture on serving plate and place waffle on it.
