Methi Falafel / Fenugreek Falafel

Chickpeas falafel made with pleasant flavour of fenugreek and served with tahini paste.

Ingredients
Boiled chickpeas                       2 – 3 cup
Fenugreek leaves chopped         ½ cup
Parsley leaves chopped              2 – 3 tbsp
Cumin powder                           1 tsp
Cayenne pepper powder             1 – 2 tsp
Black pepper powder                  2 tsp
Lemon juice                               2 tsp
Salt                                           to taste
Oil                                             to fry
For salad
Tomato                                      1 no.
Lettuce leave                              1
Lemon juice                                3 – 4 tsp
Parsley chopped                         1 tsp
For garnish
Tahini paste
Chopped parsley
Mint leaves
Sesame oil
Tomato

Method
Take a mixer, add boiled chickpeas, chopped fenugreek leaves, parsley leaves, cayenne pepper, cumin powder, black pepper powder, lemon juice, salt and make a paste.

Now give the shapes of the prepared paste.

Then deep fry them and remove on tissue.

To prepare salad
Take a mixing bowl, add sliced tomato, chopped lettuce leaves, parsley leaves, lemon juice and mix well and place on serving plate.

Place the fried methi falafel on serving plate and garnish with tahini paste, chopped parsley, mint leaves and put sesame oil on them.

Folded Pizza / Calzone

folded pizza or calzone 
Calzone is a folded baked pizza stuffed with onion, bell peppers, pizza sauce and cheese. It is great for family members as well as party crowd.

Ingredients
For dough
Refined flour                             1 ½ cup
Milk powder                              ½ tsp
Salt                                          to taste
For yeast
Yeast                                        2 tsp
Sugar                                        ½ tsp
Water                                        ¼ cup
For filling
Chopped onion                           ½ cup
Chopped red, green,
yellow bell peppers                     1 ½ cup
Chopped tomatoes                      2 tbsp
Pizza sauce                               ¼ cup
Cheese slices                             as required
For garnish
Oil                                             for glaze
Chopped bell peppers                  as required

Method
To prepare dough
Sieve refined flour, milk powder, salt in a bowl.

In another small bowl, mix yeast, sugar and water.

Then add water and yeast mixture in refined flour and make a soft dough and cover it with wet muslin cloth and keep it aside for 15 minutes for formatting.
To prepare filling
Take a mixing bowl, add chopped onion, chopped bell peppers, chopped tomatoes, pizza sauce and mix well.

Now take some portion of dough and roll out in thin round shape.

Now cut out small circles from the rolled sheet with the help of cutter.

Then place the filling and cheese on each circle.

Now fold them and seal with help of the fork.

Arrange them on baking tray and bake them for 15 minutes at 200 degree celcius in microwave.
Take out and brush oil on them.

Karela Sabzi / Bitter Gourd Curry

karela sabzi or bitter ground curry 
It is a popular north Indian dish for bitter gourd lover. This dry sabzi is very easy to prepare with easy available ingredients. Best match with white rice or rooti.

Ingredients
Sliced bitter gourd                     1 cup
Sliced onion                              1 cup
Red chilli powder                       1 tsp
Coriander powder                       ½ tsp
Finely chopped tomato               1 cup
Finely chopped green and
red chilli                                    1 tsp
Peanut powder                           2 tsp
Grated coconut                          1 tbsp
Water                                        as required
Salt                                           to taste
Oil                                            3 tbsp
For garnish
Grated coconut

Method
Heat oil in a pan, add sliced onion and sauté till light golden.

Then add coriander powder, red chilli powder and mix well.

Add finely chopped tomato and stir well then add chopped red and green chilli.

Now add sliced bitter gourd, salt and mix well and add some water and cook till bitter gourd becomes soft.

Dahi Vada

Yummy Dahi Vada is a very popular north Indian dish made with lentil dumplings dipped in yogurt and topped with boondi, red chilli powder, coriander. It is great as a side dish for party.

Ingredients
Urad daal soaked                                  ½ cup
Curd                                                     1 cup
Chashni                                                2 tsp
Coriander leaves finely chopped              as required
Red chilli powder                                   to taste
Boondi                                                  as required
Black salt                                             to taste


Method
First grind the soaked udar daal with some water and make a smooth paste.
Heat oil in a pan and put the daal paste by spoon and deep fry on low flame till golden brown.
Remove on tissue and let it cool.

Then put them in water in a bowl for 2 – 3 minutes.
Then press the wada and let come out the water and place on serving plate.
Now beat curd with chashni and pour over vadas.

Then sprinkle boondi, red chilli powder, black salt, chopped coriander and serve.

Tartar Sauce

Tartar sauce (tartar in the UK, New Zealand and Australia) is a mayonnaise-based thick white sauce. It made with mayonnaise, dill pickles, capers, mustard paste, shallots, gherkins, parsley and lemon juice. Perfect for serving with fried fish or chips.

Ingredients
Chilled soya milk                       1 ½ cup
Lemon juice                               ¼ cup
Salt                                           to taste
Mustard paste                            2 tsp
Finely chopped shallots              ¼ cup
Chopped capers                         1 tbsp
Gherkins                                    ¼ cup
Chopped parsley                         1 tsp
Lemon juice                                2 tbsp
Crushed black pepper                  to taste

Method
In a glass put chilled soya milk, lemon juice, salt, 1 tsp mustard paste and blend well with hand blender.

Now slowly add vegetable oil and blend till the mixture thickens.

Then remove the thick mixture in a mixing bowl, add remaining 1 tsp mustard paste, chopped shallots  chopped capers, chopped gherkins and mix well.

Add parsley, lemon juice, crushed black pepper, salt and mix well.

Serve the ready tartar sauce with crumbed fried baby corn and cucumber slices. 

Garlic and Parsley Bread

The tasty bread made with big loaf, baked it with smeared garlic butter parsley mixture. It is an excellent accompaniment with any soup.
 

Ingredients
French loaf (baguette)                1
Butter                                       200 gms
Garlic finely chopped                 20 cloves
Fresh parsley finely chopped      2 tbsp

Method
First slice the baguette diagonally without cutting through.

Take a mixing bowl, add butter, garlic, parsley and mix well.

Now apply this mixture between the slices.

Then wrap the loaf in aluminium foil bake it in 180 degree celcius preheat oven for 15 minutes.

Chicken and Prawn Laksa

Laksa is a popular spicy noodle dish with a curry soup base from the Peranakan culture, which is a merger of Chinese and Malay elements found in Indonesia, Malaysia. Laksa is a spicy noodle dish that is popular in Malaysia and Singapore; it's.

Ingredients
Boneless chicken (cut into strips)           100 gms
Prawns                                                 12 medium
Chicken stalk                                        1 cup
Coconut milk                                         1 cup
Noodles boiled                                       1 cup
For laksa paste
Whole dry red chillies (soaked)                6
Shallots                                                 12
Garlic                                                    4 cloves
Turmeric powder                                     ½ tsp
Galangal chopped                                   I inch pieces
Roasted peanuts                                    2 tbsp
Salt                                                       to taste
Olive oil                                                 3 tbsp
For garnish
Bean sprouts                                         ½ cup
Fresh mint leaves chopped                      6
Onion sliced and deep fried                     1 small
Lemon  sliced                                        1
Lemon grass                                         1 stalk

Method
To prepare laksa paste
First remove the seeds from soaked dry red chillies and put into mixer jar, add 10 shallots, garlic, lemon grass, chopped galangal, peanuts, turmeric powder, salt, 1 tbsp oil, little water and grind in a smooth paste.

Heat 2 tbsp oil in a pan, add chicken and sauté.
Then add laksa paste and stir.

Now add chicken stock and let it boil.

Then add prawns and cook for a minute.

Add coconut milk and mix well.

Then cook till chicken and prawn both are done.
Now put the boiled noodles in serving bowl and pour the laksa over it.

Then top with bean sprouts, chopped shallots, fried onions, mint leaves, lemon slices and serve hot.

Tomato Bruschetta

Bruschetta is traditional Italian dishes in which small bread slices are topped wipe 3 types of tomato, pesto sauce, parsley and mozzarella cheese.

Ingredients
Finely chopped garlic                ½ tsp
Chilli flakes                               ½ tsp
Crushed black peppercorns       1 tsp
Finely chopped onion                1 – 2 tbsp
Chopped tomato                       1 cup
Chopped green tomato              1 cup
Chopped cherry tomatoes         1 cup
Chopped capsicum                   1 tbsp
Oil                                            1 tbsp
Bread slices                              3 nos.
Grated cheese                           as required
For garnish
Parsley
Pesto sauce

Method
Heat oil in a pan, add finely chopped garlic, chilli flakes, crushed black peppercorn and stir well.

Add chopped tomato, chopped green tomato, chopped cherry tomato and chopped capsicum and mix well.

Then cut a bread slice in pieces.

Then add grated cheese on them.
Now heat it in oven for 2 – 3 minutes.
Take out from oven and serve on plate and garnish with parsley and pesto sauce.

Tomato Soup

Tomato soup is the most popular soup in Indian cuisine. This soup is very easy to make with easy available ingredients and is loved by all.

Ingredients
Bay leaf                                    2 nos.
Garlic cloves                             8 – 10 nos.
Sliced onion                              1 tbsp
Sliced carrot                             1 tbsp
Sliced tomato                           1 cup
All purpose flour                        2 – 3 tbsp
Water                                       as required
Butter                                       1 – 2 tsp
Sugar                                       ½ tsp
Soup cube                                1 tsp
Salt                                          to taste
Crushed black peppercorn          to taste
For garnish
Fresh cream
Puffed rice
Coriander leaves

Method
Heat oil in a pan, add bay leaf, garlic cloves, sliced onion and sauté.
Then add sliced carrot, sliced tomato then stir and add all purpose flour and mix well.

Now blend this tomato mixture well.
Then heat butter in another pan, pour the blinded puree.

Add sugar, salt, sugar cubes, crushed black peppercorn and boil it.
