Pasta Vegetable

An easy to make tasty pasta that is loaded with healthy vegetables, try and enjoy it.

Ingredients
Blanched pasta                         1 bowl
Garlic clove sliced                     8 – 10
Shallots                                    8 – 10
Corn blanched                           3 – 4 tbsp
Tomato puree                            ½ cup
Carrot   chopped and boiled        ½ cup
French beans blanched              ¼ cup  
Boiled tomato paste                  3 – 4 tbsp
Cauliflower florets boiled            ½ cup
Salt                                         to taste
Crushed pepper corn                 to taste
Oregano leaves                         5 – 6
Fresh cream                             2 – 3 tbsp
Grated cheese                          1 tbsp
Olive oil                                    2 tbsp

Method
Heat oil in a pan, add garlic cloves and sauté.
Then add onion and sauté.

Add blanched corn mix well and add tomato puree and stir and then add blanched carrot, blanched french beans and mix well.

Then add boiled tomato paste and mix well.

Add boiled cauliflower florets and mix well.

Now add pasta the mix well.
Add salt, crushed peppercorns, oregano leaves and mix well.

Then add fresh cream, grated cheese mix and serve hot.

Penne Pasta and Red Bean Salad

penne pasta and red bean salad
It is a simple salad of penne pasta with olives, baked red beans and bell peppers and the creamy dressing give it a delicious taste.

Ingredients
Boiled penne pasta                   100 gms
Baked beans                             200 gms
Chopped red bell peppers           1 no.
Chopped yellow bell peppers      1 no.
Chopped green bell peppers       1 no.
Green olives                              few
Black olives                               few
Lettuce leaves                           1 bunch
Orange wedges
Walnuts                                    few
For dressing
Mayonnaise                              2 tbsp
Chopped parsley                       few leaves
Baked bean syrup                     1 cup
Mustard sauce                          1 tbsp
Tomato ketchup                        1 tsp
Salt                                          to taste
Black pepper                             to taste

Method
Take a mixing bowl, tear lettuce leaves and add to it, add boiled penne pasta and baked caned beans.

Then add chopped bell peppers, olives and mix well.

To prepare the dressing
Take another mixing bowl, add bean syrup, parsley, tomato ketchup, mustard sauce, mayonnaise and mix well.
Then add salt, black pepper powder and mix well.

Now add this prepared dressing to the pasta mixture and mix well.

Pasta Cutlet

It is a cheesy cutlet with pasta, vegetables and white sauce. Its tasty and super easy to prepare.

Ingredients
Boiled noodles                          3 cup
Grated cheese                           ¼ cup
Beaten eggs                             1 -2 nos.
Refined flour                              as required
Bread crumbs                           as required
Oil                                            2 tbsp
For salad
Lettuce leaves                           4 – 5 nos.
Tomato                                     ½ no.
Crushed black pepper                as required
Olive oil                                    1 tbsp
For white sauce
Butter                                       1 tbsp
Sliced onion                              1 tbsp
Milk                                          2 cup
Refined flour                              ¼  cup
Juliennes red, yellow
and green bell pepper                ½ cup
Salt                                          to taste
Crushed black pepper                to taste
Clove                                        2 nos.

Method
To prepare white sauce
Put butter in the pan and add refined flour in it. Keep on stirring when the flour is being added.
Now add sliced onion, milk, capsicum and red and yellow bell pepper juliennes, salt, crushed black pepper, cloves and stir well until it becomes thick.

Then keep half of the prepared white sauce in a different bowl. 
Now heat a pan, add boiled noodles, grated cheese and the remaining white sauce and mix well.

Then in a bowl put a plastic wrap, put the noodle mixture in it and cover it with plastic wrap.

Keep it in the fridge to set for 1 to 1 ½ hour.
When it ready take out from the fridge and cut it into bread cutlets.
Now coat them with refined flour and then bread crumbs.

Then In a bowl take the beaten egg and coat the cutlets in it then coat them again with bread crumbs.

Keep coated cutlet on a plate.

Heat oil in a pan and roast the cutlets from both the sides until golden brown.
To prepare the salad
Tear lettuce leaves in a bowl and cut the tomato into slices,
Then add crushed black pepper, salt and mix olive oil. 

Place the salad on the plate with the fried cutlets and then sprinkle it with crushed black pepper.

Pasta and Vegetable soup

Easy Homemade healthy vegetable Soup with pasta.

Ingredients
Chopped garlic                         1 tsp
Chopped ginger                        1 tsp
Chopped onion                         1 tbsp
Chopped carrot                        1 tbsp
Chopped cabbage                    1 tbsp
Vegetable stock                       1 cup
Macaroni pasta                        2 tbsp
Dill leaves                               1 tbsp
Oil                                          1 tbsp
Saffron water                           1 tsp
Salt                                        to taste

Method
Heat oil in a pan, add chopped garlic, ginger and onion and sauté.

Then add carrot stir and add cabbage.

Add vegetable stock and macaroni pasta and mix well.

Pasta with mushroom

It is yummy pasta with healthy mushroom.

Ingredients
Chilli flakes                                2 tsp
Olive oil                                    1 tsp
Chopped garlic                          1 tsp
Mushroom dices                       1 cup
Chopped spring onion                ½ cup
Sliced green olives                    2 tbsp
Boiled penne pasta                   1 cup
Blanched tomato                      1 cup
Salt                                         to taste 

Method
Heat pan and roast the chilli flakes on dry pan. 
Add olive oil, chopped garlic and stir.

Now add mushroom dices, chopped spring onion and saute.

Add slices green olives, 2 – 3 tbsp water and let it sauté.

Now add boiled penne pasta and mix well.

Aglio e olio (garlic and oil)

The classic oil and garlic pasta sauce, aglio e olio, comes from Rome, where it is usually served with spaghettini (fine spaghetti), try and enjoy it.

Ingredients
Dried spaghettini                       375g
Extra virgin olive oil                   1/3 cup
Garlic cloves                             5 crushed
Dried chilli flakes (optional)        1/2 teaspoon
Pepper                                     pinch  
Salt                                          to taste
Grated parmesan (or vegetarian hard cheese) and finely chopped fresh flat-leaf parsley to serve

Method
First cook pasta in a saucepan of boiling salted water or following packet directions until tender. Drain with reserving 1/4 cup liquid.

Heat oil in a large non-stick frying pan over medium-low heat. Add crushed garlic and chilli, if using. Then cook for 1 to 2 minutes or until fragrant. Add pasta and reserved liquid. Season it with salt and pepper. Toss and cook for 1 to 2 minutes or until combined and heated through. Ready to serve sprinkled with parmesan cheese and parsley.

Carbonara pasta in 15 minutes

Carbonara is an Italian pasta dish from Latium and more specifically to Rome based on eggs, bacon, cheese and black pepper. Spaghetti is usually used as pasta. The dish was created in the middle of the 20th century.
Have dinner on the table in 15 minutes with this deliciously easy carbonara pasta.

Ingredients
Dried spaghetti pasta                   375g                  
Olive oil                                      1 tablespoon
Bacon                                        200g cut into 2cm-long pieces 
Eggs                                          2
Egg yolks                                   2
Pure cream                                1/2 cup
Finely grated parmesan cheese    2/3 cup (10 tbsp + 1 tsp)
Black pepper powder                   ¼ teaspoon
Fresh flat-leaf parsley leave          to serve

Method
First cook pasta in a large saucepan of boiling salted water or following packet directions until tender. Then drain water. Return to pan.
Mean while heat oil in a frying pan on medium-high heat. Now add bacon stir and cook for 4 minutes or until crisp.
Within this time whisk eggs, egg yolks, cream and parmesan cheese in a jug nicely. Season it with pepper.
Now add bacon and egg mixture to pasta. Cook and toss, in low heat for 1 minute or until combined properly. Top with parsley. Pasta is ready to serve.
Note: who doesn't prefer bacon (is a meat product prepared from pork), can be tried with chicken slice.
