Chickpeas Crowned Bottle Gourd

It is a unique dish made with stuffed crown shape bottle gourd pieces with delicious chickpeas mixture and sear fry in olive and sesame oil.

Ingredients
Bottle gourd                              1
Tomato                                     1
Lemon juice                              2 tsp
For paste
Boiled chickpeas                       1 cup
Roasted peanut                         ½ cup
Peanut powder                          3 - 4 tbsp
Green chillies finely chopped      3 tbsp
Black pepper powder                  to taste
Salt                                          to taste
Olive oil                                     3 – 4 tsp
For frying
Sesame oil                                3 – 4 tsp
Olive oil                                     2 – 3 tsp
Grated cheese                           2 tbsp
Black pepper powder                  2 tsp
For garnish
Peanut powder                         
Chopped green chillies
Lettuce leave chopped
Black pepper powder

Method
First peel the bottle gourd and cut in 1 and ½ inches thick pieces.
Then scoop the pieces and give crown shape to all pieces.

Then blanch the bottle gourd pieces and tomato with salt and lemon juice.

Now take a mixer and add boiled chickpeas, peanut powder, seem seeds, chopped chillies, salt, black pepper powder, olive oil and make a paste.

Now heat olive and sesame oil in a pan, add the prepare chick peas paste and stir.

Then add grated cheese and mix well, if required then add little water and mix well and remove in a bowl and let it comes in room temperature.

Then stuff the blanched bottle gourd pieces with this chickpeas mixture.

Take out the blanched tomato skin and keep aside and slice the tomato and place on serving plate.

Heat olive and sesame oil in a pan add tomato skin, pepper powder.

Then place the stuffed bottle gourd on this oil and cook for a while then sprinkle lemon juice on them.

Remove and place on serving plate on serving plate.
Garnish with peanut powder, chopped green chillies, black pepper powder, chopped lettuce leaves.

Bharwan Karela / Stuffed Bitter Gourd

bharwan karela or stuffed bitter gourd
It is a delicious dish with least fevourite vegetable bitter gourd. Stuffed healthy bitter gourd with tasty potato, bell pepper, peanut fillings and served with yummy gravy. Very easy to prepare so try it.

Ingredients
Bitter gourd                               3 nos.
Oil                                            to fry
For stuffing
Parboiled and grated potato        ½ cup
Peanut powder                          3 – 4 tsp
Mava                                        1 tsp
Salt                                          to taste
Coriander powder                      1 tsp
Red chilli powder                       1 tsp
Turmeric powder                        ½ tsp
For batter
Gram flour                                3 tbsp
Salt                                          to taste
Red chilli powder                       ½ tsp
Water                                       as required
For gravy
Ginger-garlic paste                    2 tsp
Onion paste                              1 cup
Red chilli powder                       1 tsp
Coriander powder                       1 tsp
Tomato puree                            1 cup
All ground spice                         1 tsp
Water                                        as required
Salt                                           to taste
Oil                                             3 tbsp

Method
First peel the uneven portion of better gourd and slit lengthwise.

To prepare the stuffing
Take a mixing bowl, add parboiled and grated potato, peanut powder and mix well then add mava.

Add turmeric powder, coriander powder, red chilli powder, salt and mix well.

Now stuff the bitter gourds with this prepare mixture.

Heat oil in a pan for deep frying.
To prepare batter
In another mixing bowl add gram flour, red chilli powder, water, salt and mix well.

Now coat the stuffed bitter gourds with this batter and deep fry them until brown.

Remove and keep on tissue.
To prepare gravy
Heat oil in a pan, add ginger garlic paste and sauté then add onion paste and cook well.

Add red chilli powder, coriander powder, tomato puree and stir well then add little water and cook well till oil comes out.

Then add some more water, all ground spice and mix well.

Now pour some gravy on serving plate then place the fried bitter gourd on it and pour remaining gravy over them and serve.

Dahi Vada

dahi vada
Yummy Dahi Vada is a very popular north Indian dish made with lentil dumplings dipped in yogurt and topped with boondi, red chilli powder, coriander. It is great as a side dish for party.

Ingredients
Urad daal soaked                                  ½ cup
Curd                                                     1 cup
Chashni                                                2 tsp
Coriander leaves finely chopped              as required
Red chilli powder                                   to taste
Boondi                                                  as required
Black salt                                             to taste


Method
First grind the soaked udar daal with some water and make a smooth paste.
Heat oil in a pan and put the daal paste by spoon and deep fry on low flame till golden brown.
Remove on tissue and let it cool.

Then put them in water in a bowl for 2 – 3 minutes.
Then press the wada and let come out the water and place on serving plate.
Now beat curd with chashni and pour over vadas.

Then sprinkle boondi, red chilli powder, black salt, chopped coriander and serve.

Tartar Sauce

Tartar sauce (tartar in the UK, New Zealand and Australia) is a mayonnaise-based thick white sauce. It made with mayonnaise, dill pickles, capers, mustard paste, shallots, gherkins, parsley and lemon juice. Perfect for serving with fried fish or chips.

Ingredients
Chilled soya milk                       1 ½ cup
Lemon juice                               ¼ cup
Salt                                           to taste
Mustard paste                            2 tsp
Finely chopped shallots              ¼ cup
Chopped capers                         1 tbsp
Gherkins                                    ¼ cup
Chopped parsley                         1 tsp
Lemon juice                                2 tbsp
Crushed black pepper                  to taste

Method
In a glass put chilled soya milk, lemon juice, salt, 1 tsp mustard paste and blend well with hand blender.

Now slowly add vegetable oil and blend till the mixture thickens.

Then remove the thick mixture in a mixing bowl, add remaining 1 tsp mustard paste, chopped shallots  chopped capers, chopped gherkins and mix well.

Add parsley, lemon juice, crushed black pepper, salt and mix well.

Serve the ready tartar sauce with crumbed fried baby corn and cucumber slices.

Stuffed Roasted Tomato

Stuffed tomato is the most popular stuffed vegetable dish. Here it is made with roasted tomato and stuffed with noodle mixture and top with cheese and pesto sauce.

Ingredients
Tomato                                      3 nos.
Oil                                            1 tbsp
For stuffing
Finely chopped garlic                 1 tsp
Finely chopped onion                 1 tbsp
Carrot juliennes                         1 cup
Chopped red cabbage                1 cup
Chopped mushrooms                 1 cup
Capsicum juliennes                   1 cup
Boiled rice noodles                    1 cup
Tabasco sauce                          1 tsp
Soup cube                                ½ tsp
Salt                                          to taste
Finely chopped coriander           1 tbsp
For garnish
Pesto sauce

Method
First cut a little portion of tomatoes and scoop well.

Then heat oil in a pan and roast the tomatoes carefully from all sides.

To prepare the stuffing
Heat oil in a pan, add finely chopped garlic, finely chopped onion and sauté.

Then add carrot juliennes and sauté.

Add chopped red cabbage, chopped mushroom and mix well.

Then add capsicum juliennes and mix well.

Now add boiled rice noodles and toss well.

Add little salt, Tabasco sauce, soup cubes and mix well.
Then add finely chopped coriander and mix and remove from oven.

Tinda Green Curry

Tinda curry is a healthy, simple and tasty dish of  cook in green paste coriander leaves mixture.

Ingredients
Chopped apple gourd                  1 cup
Cumin seed                               1 tsp
Turmeric powder                         1 tsp
Salt                                           to taste
For green paste
Chopped ginger                         1 tbsp
Chopped garlic                          1 tbsp
Chopped green chilles               1 tbsp
Finely chopped coriander           1 cup
Desiccated dried coconut           1 cup
For garnish
Fried dry  red chilles

Method
To prepare green paste
Put chopped ginger, garlic, chillies, coriander, coconut in a blender and  make a smooth paste.

Heat oil in a pan, add cumin seed, chopped apple gourd and sauté well.

Then add salt, turmeric powder and stir well.

Now add the prepared green paste and mix well.

Turai Amchoori / Jhinge Amchoori / Tasty Ridge Gourd

It is a very simple but yummy vegetarian dry type dish of ridge ground.

Ingredients
Peeled ridge gourd                    1 cup
(cut in weeben)
Corn flour                                 1 – 2 tbsp
Salt                                          to taste
Dried mango powder                  1 tsp
For tadka
Cumin seeds                             1 tsp
Dried red chilli                           3 nos.
Sliced onion                              1 cup
Sliced tomato                            1 cup
Dried mango powder                  1 tsp
Salt                                           to taste
Oil                                            1 tbsp
For garnish
Coriander leaves

Method
Take a mixing bowl, add peeled ridge gourd, corn flour, salt, dried mango powder and mix well.

Then put them in hot oil one by one and deep fry until golden brown.
