Drumstick leaf curry

Drumstick leaves curry is base on yellow lentils, is a very nutritious for your body.

Ingredients  
Rolled yellow lentils
Drumstick leaves
Fresh coconut
Asafetida
Garlic
Curry leaves
Red chili powder
Tamarind juice
Mustard seeds
Coriander seeds
pepper
Chilies salt
Fenugreek

Method
Roast the red chilies, fresh coconut, coriander seeds and fenugreek seeds and grind them to a smooth paste.
Heat some oil in a pan and add, mustard seeds, coriander seeds, curry leaves, chilies and asafoetida, than add the above mentioned paste then stir.

Pour boiled yellow lentils along with water and cook for 2 minutes.

Then to it add paste (made from coriander seeds, pepper and red chilies, tamarind juice), salt and drumstick leaves, stir for while.

Add fresh coriander leaves and let the curry cook well for sometime serve hot.

Santva

santva
Santva is a flavourful mix vegetable curry. best match with hot rice or paratha.

Ingredients
Eggplant (brinjal)
Pieces of red pumpkin
Pieces of bottle gourd
Tomato
Black caraway seed (kalonji)
Cumin deed
Mustard seeds
Asafoetida
Oil
Fennel seeds
Carom seeds
Black caraway seeds
Garlic
Chilli flacks
Salt
Fresh coriander

Method
Steam the pieces of brinjal, red pumpkin, bottle ground and tomatoes along with some water and salt.

Drain it and again put in pan.

Then add some garlic, coarsely ground red chillies in it and mix well.

Temper some oil with mustard seed, black caraway seeds, cumin seed, fennel seed, carom seed and asafoetida

Then add some water and cook the vegetable for a few more minutes.

Garnish santva with fresh coriander and serve hot.

Chiku (sapodilla) ka halwa

Chiku ka halwa is an uncommon dish to us. Very easy to prepare so try it.

Ingredients
Chiku cut in cubes                     5 nos
Milk                                          ½ liter
Khoa                                        1 cup
Deshi ghee                               1 tbsp
Sugar powder                            4 tbsp
For garnish
Cashew nut and dried grapes

Methods
First heat milk in pan.
In the mean time put chikku and little milk in mixer and blend in smooth paste.

Now add khoa and sugar powder in hot milk and stir until melt.
Add deshi ghee and stir and add chiku mixture and cook for 4-5 minutes or until milk become thick in low flame.

Now halwa is ready, pour it in serving plate and garnish with cashew nut and kishmish. 

Amla ka achar

amla ka achar
Amla achar is very tasty and easy to make. Taste it after lunch.

Ingredients
Boiled amla                               500 gm
Cumin seed                               1 tsp
Ajwan                                       ½ tsp
Asafoetida                                 pinch               
Amchur powder                         1 tsp
Jaggery                                     2 tsp
Mustard oil                                2 tsp

Method
First heat oil in pan then add cumin seed, ajwan seed, asafoetida the n stir.
Add amchur powder and jaggery then stir. Put little water if require.

Now add amla then stir. Cover and cook for 5-6 minutes.

Khatta mitha kaddu/sweet n sour pumpkin

It is a very tasty and easy to prepare vegetable dish. Best match with paratha or puri.

Ingredients
Pumpkin cut in cube                  500 gms
Ginger chopped                         3 tsp
Dry red chilli chopped                1 tsp
Coriander seed                          2 tsp
Fenugreek seed                        ½ tsp
Amchur powder                         1 ½ tsp
Sugar powder                            2 tsp
Curry leaves                              8-10 nos
Salt                                          to taste
Oil                                            2 tbsp

Method
Heat oil in a pan, add fenugreek seed, curry leaves, dry chilli, coriander and ginger stir for a minute.
Add pumpkin and salt then stir and cover for about 10 minutes. Stir in middle.

Open the cover and add sugar and amchur powder then stir well for 2 minutes.

Sesame vegetable rice

sesame vegetable rice
It is a vegetable rice base on sesame.

Ingredients
Boiled basmati rice                    2 cup
Vegetable stock                        3 tbsp
Onion sliced                              1 tbsp
Asparagus cut in 2 inches          1 tbsp
Button mushrooms sliced           1 tbsp
Red bell pepper                         1 tbsp
Ginger chopped                         1 tsp
Garlic chopped                          1 tsp
Sesame seed                            2 tbsp
Sesame oil                               1 tbsp
Soy sauce                                1 tsp
Peanut oil                                 3 tbsp
Salt                                          to taste

Method
Heat oil in pad, add onion and asparagus then stir, add ginger and garlic then stir.
Now add mushroom, red bell pepper and stir, then add soy sauce and vegetable stock and mix well.

Now add rice and toss nicely for 2 minutes.

Now sprinkle sesame oil and mix, in this stage the rice will sign.
Add sesame seeds then stir a toss well.

The sesame vegetable rice is ready to serve.



Paneer (tofu) cutlet

It is a very popular dish with tofu and very easy to prepare.

Ingredients
Grated paneer (tofu)                  1/2 kg
Boiled and grated potato            1
Chopped onion                          1
Chopped green chilies                2
Garam masala                          1/2 spoon
Jaiphal (nutmeg) powder            1/4 tbsp
Chopped coriander leaves           2 tbsp
Egg                                          1
Bread crumbs fresh                    1 cup
Oil                                            for fry
Salt                                          to taste

Method
In a bowl take grated paneer, boiled and grated potato, egg, chopped onion, green chilies, garam masala, nutmeg powder, salt, chopped coriander leaves and mix them well.
Now make the cutlets of the mixture and wrap them with fresh bread crumbs.

Deep fry them until golden brown.

Garnish and serve.

Tom kha kai

It is a thai curry in cream coconut base.

Ingredients
Chicken stock                           200 gms
Boneless chicken                      30 gms
Button mushroom                      15 gms
Lemon grass                             5 gms
Kaffir lime                                 2 gms
Cilantro                                     5 gms
Fish sauce                                5 ml
Lemon juice                              1 tsp
Coconut milk                             1 cup

Method
First make a chicken stock, cut the chicken in small cubes.
Now wash the mushroom and cut it into dice and fried garlic, season and toss nicely.
Take a chicken stock in a sauce pan and add lemon grass, kaffir lime leaves, chicken cube and mushrooms, stir well and cook. As the chicken cook add lemon juice, fish sauce and sweet chilli paste.
Finish off with coconut milk and stair for 2 minutes in low flame.

While serving garnish with some cilantro leaves.

Hot stone rice

It is a aroma rice from Thailand, served in hot stone bowl. It is not recommended to serve with any curry.

Ingredients
Steam rice                                150 gm
Vegetable stock                         50 ml
Bell peppers                              20 gms
Garlic                                        20 gms
Shallot                                      20 gms
Oil                                            20 gms
Chilli                                         20 gms
Hot basil                                   30 gms
Oyster sauce                             30 gms
Thai hot basil                            30 gms
Sugar                                       10 gms

Method
Boil some long grain rice in vegetable stock, drain and cool.
Heat oil in pan add garlic stir and add hot basil (make hot by palm), add boiled rice and toss.
For sauce in a pan add oil then add shallots, sauté and add water, sugar, oyster sauce and reduce.
Now add yellow bell pepper chopped, stair.

Add more thai besil chopped and stir. In this stage the aroma will come.

Add sauce and toss well.

Serve rice in hot stone bowl and serve immediately.

Shrikhand biscuit pudding

It is a high calorie yummy dish for children’s party.

Ingredients  
Kesari shrikhand                        4 cups
Sweet biscuits                           20
Chocolate cream biscuits           20
Butter (melted)                          4 tbsp
Kiwi (peeled and sliced) 2
Ripe mango                               2
Plums (pitted and sliced)            1

Method
First crush sweet biscuits in a mixer and add melted butter and mix.
Now grease the base of a spring form cake tin with a little melted butter.
Then put this mixture on the greased base of the spring-form cake tin and press lightly.

Now arrange chocolate cream biscuits along the sides of the cake tin.
Chop ripe mangoes and add to the shrikhand and mix then press lightly.

Now arrange the kiwi slices on the top and plum slices in the middle and chill till set.

Take out from tin and serve.

‘Steamed n fried’ momo with egg poach

It can be a new breakfast dish on your plate, a healthy momo with egg.

Ingredients  
For dough
Refined flour                             1 cup
Egg                                         1 no
Salt                                          to taste
For filling
Oil                                           1 tsp
Sesame oil                               1 tsp
Ginger chopped                         1 tbsp
Onion chopped                          2 tbsp
Cashew nuts chopped                2 tsp
Carrot chopped                          2 tbsp
Mushrooms chopped                  2 tbsp
French beans                            2 tbsp
Tofu                                          200 gms
Bean sprouts                            2 tbsp
Spring onions chopped               2 tbsp
Soy sauce                                ½ tsp
Salt                                          to taste
Black pepper                             to taste
For garnish
Egg                                          1 no
Sesame oil                               1 tsp
Spring onion chopped                1 tbsp

Method
First In a pan heat refined oil and sesame oil together.
Then add ginger, onions and cook it well.
Now add cashew nuts, carrots, French beans, mushrooms, salt and black papper and stir it for 2-3 minutes.
Now cut small pieces of tofu and add to the pan and mix well.

Then add spring onions, bean sprouts and mix well.
Remove it on a plate and keep it in fridge.

Now in a bowl add wheat flour, egg, salt, baking soda, water and knead the dough and keep it aside for 10 minutes.
Roll the dough into a thin flat round ( sprinkle flour over it then fold it and again roll it then open the fold, like this it will be more thin).

Then cut it into roundels with the help of a cutter.
Now remove the filling from the fridge and put it on one of the small flat round.

Then cover it with the other flat round and seal it. Design the edge with fork spoon.

Put it in steamer for 2-3 minutes or until cook.
Now remove the momos from the steamer and cook in on a pan with little oil.
Make a egg poach in the same pan with the momo.

Now remove the momo (only down side will be little crisp) on plate and put egg poach on it and garnish with spring onions, sesame oil and serve.
