Hot & Sour Sauce

hot and sour sauce
Hot and Sour Sauce is one of the most tasty and popular sauces in Chinese cuisine which is very easy to make.

Ingredients
Finely chopped garlic                2 tbsp
Finely chopped tomato              ½ cup
Tomato ketchup                        2 tbsp
White vinegar                            2 tbsp
Sugar                                       ½ tsp
All ground spice                        ½ tsp
Soya sauce                              1 tbsp
Oil                                            2 – 3 tbsp

Method
Heat oil in a heavy based saucepan, add chopped garlic and sauté.
Add chopped tomato and mix well.
Add tomato ketchup, sugar and mix well.

Add vinegar and mix well.

Add soya sauce and stir well.

Add all ground spiced to make it Indian.

Chilli Paneer

chilli paneer 
Chilli Paneer is a melt in the mouth starter with Chinese flavour,  is an all time favourite to all that is really easy to prepare.

Ingredients
Paneer (cottage cheese) cubes  250 gm
Corn flour                                  2 tbsp
Oil                                            for frying         
Salt                                          to taste
Green bell pepper                      1 no.
Onions                                      2 nos.
Green chillies                            5 – 6 nos
Chopped garlic                          3 – 4 cloves
Oil                                            1 tsp
Corn flour                                  2 tbsp
Vegetable stock                        ½ cup
Soya sauce                              1 tsp
Tomato ketchup                        1 tbsp
Vinegar                                     1 tsp
Salt                                           to taste

Method
In a bowl put paneer cubes and toss with corn flour and salt.

Deep fry this paneer until golden and keep aside.
In another bowl add corn flour, vegetable stock, soya sauce, tomato ketchup, vinegar and mix well.

Slice the capsicum and onions.

Now heat oil in a pan on high flame, add chopped garlic stir and add sliced onion and capsicum and stir well.

Now add fried paneer and toss well.

Then add the prepared soya sauce-ketchup mixture, required salt and mix well until become thick.

Remove and serve hot.

Schezwan Sauce

schezwan sauce 
Schezwan sauce is one of the main ingredients of Indo Chinese recipe. Very easy to prepare and can be used for 15 – 20 days.

Ingredients
Kashmiri red chillies                   20 nos.
Red bell pepper                          1 no.
Chopped garlic                           2 tsp
Chopped ginger                          1 tsp
Vinegar                                      1 cup
Tomato paste                             2 tbsp
Salt                                           to taste
Sugar                                        1 tsp
Kashmiri red chilli powder            1 tsp
Sesame oil                                 ¼ cup

Method
Take a bowl, add red chillies and water then keep in oven for 1 minute in high power.

Take out the bowl from oven and keep aside for 30 minutes.
Then drain the water and put the chillies in blender, add chopped garlic, chopped ginger, chopped bell pepper, vinegar, tomato paste.

Now add chilli powder, sugar, salt and blend.

Heat sesame oil in a pan on high flame.

Then pour this hot oil into blender and mix with a spoon.

Now keep this prepare schezwan paste in air tight container and keep in fridge.

Chicken Lollipops

A famous deep fried Chinese starter served with schezwan sauce. Try this easy to make Chicken Lollypop recipe at your home and enjoy

Ingredients
Chicken wings                           12 – 14 nos.
Oil                                             to fry
For batter
Corn flour                                   ½ cup
Refined flour                               ½ cup
Eggs                                         2 nos.
Chilli paste                                1 tbsp
Garlic paste                               1 tbsp
Soya sauce                               2 tsp
Oil                                            1 tbsp
Salt                                           to taste
Black pepper powder                   to taste
To serve
Schezwan sauce                        as required

Method
To prepare batter
Take a mixing bowl, add corn flour, refined flour, eggs, garlic paste, chilli paste, soya sauce and mix well.
put all ingredients in flour
Then add water, salt, black pepper, oil into bowl and mix well.

Coat the chicken wings with the batter.
put chicken wings in batter
Heat oil in a pan.
Now fry the coated chicken wings on low flame till light brown then remove on tissue.

Then again put the fried chicken wings on high flame till golden brown 
again fry until golden brown 
And remove on tissue.

Now place them on serving plate and serve with schezwan sauce.

Vegetable lo mein

It is a tasty dish, place cooked vegetables on steamed noodles.

Ingredients
Red bell pepper juliennes           1 tbsp
Carrot juliennes                         1 tbsp
Zucchini juliennes                      1 tbsp
Yellow squash juliennes             1 tbsp
Broccoli florets                          7 – 8 nos
Ginger  juliennes                       2 inches
Soy sauce                                2 tsp
Chilli sauces                             1 tsp
Tomato sauce                           3 tsp
Hoisin sauce                            4 tbsp
Chicken stock                          as required
Crushed black pepper               1 tsp
Honey                                     1 tsp
Coriander leaves                       7 – 8 nos
Sesame oil

Method
First heat water in a pan put salt and keep a strainer filled with boiled noodles on it and steam.

On the other oven heat sesame oil, add ginger juliennes, carrot juliennes, red bell pepper juliennes, green zucchini juliennes, Yellow squash juliennes and toss them.

Then add soy sauce, chilli sauce, tomato sauce, hoisin sauce and mix well.

Add broccoli florets slices then mix.

Add require chicken stock, crushed black pepper, coriander and honey and cook for 1 to 1 ½ minutes.

Now place steamed noodle on serving plate.

Make a hole at middle and pour the vegetable mixture into it.

Tofu chilli garlic

Ingredients
Tofu cubes                               1 cup
Dry red chilli                              3 nos
Garlic chopped                         1 tsp
Ginger chopped                        1 tbsp
Oil                                          1 tbsp
Red bell pepper diced               1 no
Green bell pepper diced            1 no
Yellow bell pepper diced           1 no
Soya sauce                             3 tsp
Black peppercorn powder          to taste
Roasted peanut                        2 tbsp
Salt                                         to taste

Method
Heat oil on a pan, add chopped dry red chilli, garlic, ginger, tofu and mix them lightly.

Now add chopped red bell pepper, green bell pepper and yellow bell pepper and sauté.

Then add soya sauce, blakh peppercorn powder, roasted peanut and salt and toss well.

Remove to serving plate and garnish with spring onion and carrot flower.

Ingredients
Carrot chopped                           ¼ cup
Onion chopped                           ¼ cup
French beans chopped                ¼ cup
Cabbage chopped                       ½ cup
Garlic chopped                           1 tbsp
Red bell pepper chopped             ½ cup
Vegetable stock                         200 ml
Soya sauce                               1 tbsp
Vinegar                                     1 tsp
Green chilli sauce                      1 tbsp
White pepper powder                  to taste
Corn starch                               2 tbsp
Salt                                          to taste
Oil                                            2 tbsp
For garnish
Spring onion shoots
Fried noodle
Carrot chopped

Method
First heat oil on a pan, add chopped carrot and stir, add onion and sauté.
Then add chopped french beans, chopped cabbage and stir well.
Now add chopped garlic, chopped red bell pepper and mix them well.

Then add soya sauce, vinegar, chilli sauce, vegetable stock and salt and mix well.
Now mix corn starch with water and add to the soup and stir well.
Remove the ready manchow soup in a serving bowl top with fried noodles and spring onion shoots.

Garnish on spoon with chopped carrot and spring onion.

Chilli orange wonton soup

chilli orange wonton soup
A unique Chinese vegetable healthy soup of wontons cooked with orange juice. 

Ingredients
Fresh red chilli (diagonally sliced)
1
Orange juice
1 cup
Wonton wrappers
4
Vegetable stock
3-4 cups
Red chilli sauce
as required
Carrot , cut into star shaped pieces
½  medium
Cabbage leaves chopped
4 leaves
Salt
to taste
Corn flour/ corn starch
2 tsp
Spring onion greens chopped  for garnish

Method
first cut the wonton wrappers into four pieces each.
Now place them on a flat surface, dampen the edges all around and Place a little chilli sauce in the centre of each wonton piece.

Then fold one corner over the other keeping it a little off centre to resemble a triangle.

Now dampen the edges again and bring two corners to the centre and press lightly.

Heat vegetable stock in a wok. And put the wontons in the boiling vegetable stock.
Add carrot, cabbage, fresh red chilli and salt.

Now add orange juice and cook for three to four minutes.
Mix corn flour in quarter cup of water and add to the soup. Cook till the soup thickens.

Now pour into a soup bowl, garnish with spring onion greens and serve hot.

Peanut sesame chicken

peanut sesame chicken
It is chinese chicken dish with main ingredient sesame oil, orange juice and wonton, so it is healthy, tasty and easy to prepare.

Ingredients
Peanut roasted                          4 tbsp
Sesame seed toasted                2 tbsp
Chicken breasts                        500 gm
(cut into strips)
Sesame oil                               6 tbsp
Baby corn                                 4
(diagonally sliced)
Broccoli florets                          6 small
Orange juice                             1 cup
Wonton wrappers                      2
Salt                                          to taste
Soy sauce                                2 tsp
Corn flour                                  1 tbsp
Red capsicum                           1 medium
(seeded and sliced)

Method
First heat 2 tbsp sesame oil in a wok and add baby corn and sauté.
Then add chicken and continue to sauté.

Now add broccoli, orange juice and cook.

Add soy sauce and salt in chicken and mix.
Now in a small bowl add corn flour and ½ cup water, mix and add to chicken, stir.
Add peanut and sesame seed and mix well.

Now add red capsicum and cook on high heat for 2 minutes.
Now in other pan heat the remaining sesame oil.
Roll 2 wonton strips and further cut them into thin slices.

Add them to the hot oil and fry till crisp.

Transfer the ready chicken into a serving dish and top it with fried wonton strips. Serve hot.
