Chilli Garlic Fish

It is a very fast and easy to prepare and tasty dish of fish with chilli and garlic flavour with hung curd.

Ingredients
Sole fish cut in cubes                8 pieces
Onion seeds                             1 tsp
Garlic finely chopped                 1 tbsp
Chopped green chillies               1 ½ tsp
Hung curd                                 250 gm
Turmeric powder                        1 tsp
Salt                                           to taste
Mustard oil                                 2 tbsp
           
Method
Take a mixing bowl, add hung curd, salt, turmeric powder and beat well by spoon.

Then add fish cubes and mix well then keep aside.

Heat mustard oil in a pan and sauté onion seeds in it.

Then add chopped chillies and stir.

Add chopped garlic and mix well.

Now add the marinated fish with curd mixture and mix well.

Then cover and cook for 5 – 7 minutes.

The yummy chilli garlic fish is ready to serve.

Baked Fish Cake

This is a fabulous recipe of Baked Fish Cakes that is easy to make at home.

Ingredients
Minced ravas fish                      4 – 5 tbsp
Finely chopped garlic                1 tsp
Finely chopped onion                1 tbsp
Finely chopped leek                  2 tbsp
Finely chopped red, yellow
green bell pepper                      3 – 4 tbsp
Black pepper powder                to taste
Egg                                          1no
Parsley                                     1 tsp
Fresh cream                              4 tbsp
Salt                                          to taste
Oil                                            as required

Method
Heat oil in a pan, add finely chopped garlic, finely chopped onion, finely chopped leek and sauté.

Then add chopped red yellow green bell peppers and mix well.

Now add minced ravas fish, black pepper powder, salt and cook it.

Take a mixing bowl, add egg, parsley, cream and mix well.

Then add the prepared fish mixture and mix well.
Take two bread slices and cut the crust.

Grease two moulds with butter and put the bread slice on it, spray water and push the bread piece into mould to give shape.

Cut the extra bread wedges.
Now stuff the prepared filling and bake it on 180 degree celsius for 12 minutes.

Grilled Red Snapper

Red snapper (Lutjanus campechanus) are one of the Gulf of Mexico's signature
fish. They are extremely popular for firm texture and nutty flavor. Grilled red snapper is grilled with lemon and black pepper and served with creamy dip and blanched vegetable. So it is a very healthy and easy to prepare Mexican dish.

Ingredients
For marinate
Red snapper fish                       500 gm
Salt                                          to taste
Lemon juice                              2 tbsp
Black pepper powder                 1 tsp
Thyme                                      1 pinch
For dip
Butter                                       2 tbsp
Cream                                      3 – 4 tbsp
Parsley                                     ½ tsp
Red chilli powder                       ½ tsp
Lemon juice                              2 tbsp
White pepper powder                 ½ tsp
Salt                                          to taste
Mix vegetable
Potato chopped                        3 – 4
Coriander leaves                       1 tbsp
Baby corn chopped                   3 – 4
Chopped broccoli floret              3 – 4
Chopped carrot                         3 – 4
Zucchini                                   3 – 4
Olive oil                                    2 tbsp
For garnish
Lemon wedges
Selry leaves

Method
For marinate
Take fish pieces in a bowl, add black pepper powder, thyme, salt and lemon juice and mix well and keep aside.
For dip
Melt butter in a pan.

Then add cream and mix well.

Add salt, white pepper, parsley and mix well and cook for while on low flame.

For fish
Heat olive oil in another pan, add fish on it and cook from both sides for 3 – 4 minutes.

Then remove on serving plate.

Now add chilli powder in cream mixture and mix well. Switch off oven.

For vegetable
In the same oil of grill fish, add all blanched chopped vegetable, salt and toss well.
Serve beside fishes and pour the prepared cream mixture over fish.

Garnish with lemon wedges and coriander leaves.

Magur macher jhol / catfish curry

magur macher jhol or catfish curry
It is very much popular catfish (known as Magur) in West Bengal. Here it cooked in flevoured gravy to make it delicious.
Catfish meat helps in blood purification and help to fight against dieses.

Ingredients
Magur fish                                300 gm (6 pcs)
Garlic cloves (chopped)             6 – 7
Onion (chopped)                       1 big
Ginger paste                            1 tbsp
Cumin powder                          2 tsp
Red chilli powder                      1 tsp
Green chillies                           2 - 3
Coriander powder                     1 tsp
Turmeric powder                       2 tsp
Kashmiri mirch powder              ½ tsp
Bay leaves                               2
Potato  in cubes                       2 big
Garam masala paste                1 tsp
Salt                                         to taste
Sugar                                      1 tsp
Oil                                           3 tbsp

Method
First properly wash the fishes and marinate with turmeric powder and salt for 10 – 15 minutes.
Within this time finely chop garlic and ginger. Make paste of ginger then make smooth paste of garam masala with 2 cardamoms, 1 clove, 1 inch cinnamon.
Heat oil in wok, add fish pieces and sallow fry from both sides, remove and keep aside.
Add potato pieces and fry till light brown, remove from oil and keep aside.
In this same oil add chopped garlic then stir until light brown.
Then add chopped onion and stir until light brown then add sugar and mix well.
Add chopped tomato and stir till soft and mix well.
Add ginger paste, cumin powder, chilli powder, kashmiri mirch powder and cook until oil gets separated from masala.

Then add fried potatoes, bay leaves and mix well and cook for a minute.

Heat-up some water on other oven.

Add coriander powder into potatoes and mix well.

Now add required water, salt, turmeric powder and mix well. Cover and cook for 4 – 5 minutes or until potatoes turn soft.

Now add fried fishes, green chillies and again cover and cook for 2 – 3 minutes.

Open cover and add garam masala paste then mix well.

let boil the gravy then remove and pour into serving bowl.

Tilapia macher kalia / Tilapia fish curry

It is a popular Bengali dish. This yummy dish cooked with tilapia fish with yogurt and simple spices, very easy to cook within 20 – 25 minutes for 4.

Ingredients
Tilapia fish                                 4
Onion finely sliced                      3
Garlic finely sliced                     6 – 7
Ginger  finely sliced                   2 inches
Yogurt                                      2 tbsp
Turmeric powder                        2 tsp
Chilli powder                             1 tsp
Cumin powder                           1 tsp
Sugar                                       1 tsp    
Salt                                          to taste
Mustard oil                                3 tbsp

Method
First properly wash the fishes then marinate with turmeric powder and salt for 10 minutes.

Within this time finely slice the onion, garlic and ginger.
Heat oil in a wok, fry fishes till light brown from both sides.

Remove and keep aside.
Add garlic in same oil and sauté.

Then add ginger and stir.

Add onion and sauté until light brown on low flame.

Then add cumin powder, chilli powder and turmeric powder and cook for 3 – 4 minutes.

In a bowl mix yogurt and sugar and pour in wok. Mix well and cook for 2 – 3 minutes.

Rinse the yogurt bowl with ½ cup of water and add to wok and mix well.
Now add fried fishes, salt and mix well with gravy. Cover and cook for 5 – 7 minutes.

Chilli Garlic Dragon Fish

An awesome oriental preparation in chilli and garlic sauce, cooking time is 15 – 20 minutes for 4.

Ingredients
Pomfret
2 medium


Corn flour/ corn starch
1/4 cup + 1 tablespoon

Oil
2 tablespoons + to deep fry

Spring onion greens chopped
2-3 stalks

Spring onions chopped
4-5

Garlic chopped
15-20 cloves

Red curry paste
1 tablespoon

Sugar
5 teaspoons

Vinegar
2 tablespoons


Method
first slit the Pomfret and removes the central bone then make gashes on either side.
Now sprinkle salt and corn flour on the outside and inside of the fish.

Heat sufficient oil in a deep pan, then put spring onion greens in a strainer and flash fry in the hot oil, drain and set aside.
Now heat two tablespoons of oil in another pan, add spring onions, garlic and red chilli paste and mix well.

Sauté for a minute then add two cups of water then mix and cook.
Deep fry the pomfret till lightly golden all over.

Now place most of the spring onion greens on a dish and drain the fish and place over them.

Mix a tablespoon of corn flour in 1/3 cup of water.
Add salt and sugar to the sauce and mix well.
Add the corn flour and mix and cook till the sauce thicken then add vinegar and mix.
Now pour the sauce over the fish.

Then sprinkle the remaining spring onion greens and serve hot.
