Sugarcane Kheer

It is a different type of sweet dish of vermicelli cooked in healthy sugarcane juice with dry fruits.

Ingredients
Vermicelli                                  3 tbsp
Ghee                                         3 tbsp
Sugar                                        2 – 3 tbsp
Sugarcane juice                         1 cup
Cardamom powder                     ½ tsp
Chopped almond, pistachio
And cashew nuts                       3 – 4 tsp
For garnish
Cashew nut
Almond
Pistachio

Method
Heat ghee in a pan, add broken vermicelli and roast it till light brown.
Now add sugarcane juice and stir well and add sugar and cook.

Then add chopped dry fruits and mix well.

Now serve it in a bowl and garnish with dry fruits.

Palak Malai Barfi

It is a delicious sweet dish made with healthy spinach, milk and dry fruits.

Ingredients
Boiled finely chopped spinach                 1 cup
Milk                                                      1 cup
Granulated khoya                                  2 tbsp
Sugar                                                   6 – 8 tbsp
Soaked saffron in milk                            2 tbsp
Almond finely chopped                           1 tsp
Pistachio finely chopped                        1 tsp
Desi ghee                                             3 tbsp
For garnish
Silver leaf

Method
Heat desi ghee in a pan, add spinach in it ans stir for 2 – 3 minutes.
Then add milk, saffron soaked  and mix well.

Add khoya, sugar and mix well then cook for 4 – 5 minutes.

Now grease plate and sprinkle chopped almond and pistachio.

Then pour the cooked spinach on it and spread then freeze it for 2 hours.

Take out from freeze and cut in pieces.

Chocolate with sponge

chocolate with sponge
It is a delightful chocolate dish with sponge, chocolate syrup, jam and plum. Very easy to prepare so try it.

Ingredients
Sponge chocolate flavour            2nos
Chocolate syrup                        ½ cup
Fruit jam                                   2 – 3 tsp
Plum(Alu bukhara) chopped       1 tbsp
Chopped dry fruit                       as required
Chocolate flavoured cream          for garnish
Vanilla flavoured cream              for garnish

Method
Take a mixing bowl, crush the sponge in it.

Then add chocolate syrup and mix well.

Add fruit jam and mix well.

Then add plum (aloo bokhra), chopped dry fruits and mix well.

Now take a butter paper and put the prepared mixture on it and add chopped dry fruits.

Then roll it and close both sides lightly and keep it fridge for an hour.

Now remove from butter paper and cut in middle and place on serving plate.

Coconut Dumplings

It is a very easy to prepare sweet Indian dumpling with coconut, Bengal gram and jaggery mixture which is delicious.

Ingredients
Refined flour dough                   1 cup
Soaked and boiled split
Bengal gram                             1 cup
Jaggery                                    2 – 3 tbsp
Grated coconut                         ½ cup
Cardamom powder                    ½ tsp
All purpose flour                        as required
For garnish

Method
Take a mixing bowl, add boiled split Bengal gram, jaggery.

Add grated coconut, cardamom powder and mix well.

Now make rotis of refined flour dough.

Place the roti on triangular mould and stuff the prepare gram-coconut mixture in it.

Close the mould and cut the extra roti portion and take out the dumpling and keep aside.

Now place them in a bamboo steamer.

Then cover and steam for 15 minutes.

Serve the prepared dumplings with coconut-tomato dip.

Coconut Rice

This delicious South Indian styled coconut rice is very easy to make & tastes mind blowing if you have fresh coconut. Coconut rice is a dish prepared by soaking white rice and cooking it within coconut milk with coconut flesh. Coconut Rice is a very simple recipe and can be done by everyone.

Ingredients
Ghee                                        1 tbsp
Cashew nuts                             4 – 5 nos.
Raisins                                     8 – 10 nos.
Jaggery                                    1 tbsp
Sliced coconut flesh                  1 cup
Soaked rice                              1 cup
Coconut milk                            1 cup
Water                                       as required
For garnish
Dried grated coconut
Roasted curry leaves
Green chilli
Raisins
Cashew nuts

Method
Heat ghee in a pan, add cashew nuts, raisins and stir.

Then add jaggery and mix well.

Add sliced coconut flesh and stir well.

Add soaked rice and mix.

Then add coconut milk, some water and cover the lid and cook until done.

Now serve the rice in coconut shell.

Besan Halwa

besan halwa
Besan (gram flour) halwa is a rich, sweet, traditional Punjabi favourite for any celebrations and puja. It's also helpful for curing sore throats.

Ingredients
Clarified butter (ghee)                ½ cup
Gram flour                                1 cup
For doodh ki chaashni
Milk                                          1 ½ cup
Powdered sugar                        ½ cup
Cardamom powder                    1 tsp
Saffron water                            1 tsp
For garnish
Rose leaves
Silver foil

Method
To prepare doodh ki chaashni
In a pan heat up milk, add powdered sugar, cardamom powder, saffron water then stir and let it cook.

In another pan heat clarified, add gram flour and stir well.
put besan in ghee and stir
Now add the saffron milk into gram flour and keep stirring

Strring continuously until it becomes smooth thick mixture.

Now pour the besan in a bowl and garnish them with rose leaves by putting the silver foil on it.

Lassi

Lassi is a popular and traditional yogurt-based sweet drink of India, is the perfect cooler on a hot day.

Ingredients
Yoghurt                                    1 cup
Powdered sugar                        2 tbsp
Cardamom powder                    1 tsp
Saffron water                            1 – 2 tsp
Almonds flakes                         1 tbsp
Milk                                          ½ cup

Method
Take a blender and put yogurt, sugar powder, cardamom powder.

Now add milk.

Then blend it well.
