Sugarcane Lollipop

It is a mouth watering snack made with vegetable mixture with spices and gave shape of lollipop with sugarcane stick.

Ingredients
Boiled and mashed potato         1 cup
Finely chopped carrot                ½ cup
Finely chopped green beans      ½ cup
Fine chopped red, green,
Yellow bell peppers                   ½ cup
Finely chopped baby corn          ½ cup
Finely chopped coriander           3 – 4 tbsp
Finely grated ginger                   ½ tsp
Finely chopped garlic                 ½ tsp
Corn flour                                  2 tbsp
Salt                                          to taste
Black pepper powder                  to taste
Sugarcane juliennes                   3 nos.
Corn flakes                                for coating
For garnish
Finely chopped salad leaves
Sweet chilli sauce

Method
Take a mixing bowl, add boiled and mashed potato, finely chopped carrot, green beans, chopped bell peppers.

Then add baby corn, green coriander, finely chopped ginger, finely chopped garlic, salt, black pepper powder and corn flour and mix well.

Now shape lollipops of this mixture with the help of the sugarcane stick.

Then semi-crushes the cornflakes and coat the lollipops with it.

Now deep fry those until golden brown then remove on tissue.

Take short glasses, put finely chopped salad leaves and sweet chilli sauce then place the lollipop on it and serve.

Yoghurt Ice Cream

Our all fevourite ice cream here made with healthy yoghurt, which is very easy to prepare so make it and surprise your family members and friends.

Ingredients
Gelatin                                      1 ½ tsp
Hung curd                                 1 cup
Sugar syrup                              ½ cup
Salt                                          to taste
Milk                                          30 ml
For garnish
Strawberry syrup                       as required
Chocolate triangles                    as required

Method
First in a small bowl mix water and gelatin together.

Then heat gelatin mixture in microwave oven for 10 second for dilute.
Now take a mixing bowl, add hung curd, sugar syrup, salt, milk and mix well.

Then add prepared gelatin and mix well to make ice cream.

Now pour this mixture in a bowl and keep it freezer to set.

Then scoop out the set ice cream in serving glass.

Then garnish with strawberry syrup and chocolate triangles and serve.

Corn Fritter with Tropical fruits

Traditional corn fritter made in easy way and served with fresh tropical fruits.

Ingredients
For corn fritter
Boiled corn                               2 cup
Sugar                                       3 tbsp
Coconut milk                            1 cup
Baking powder                          1  tsp
Corn flour                                  2 – 3 tbsp
For tropical fruits
Finely chopped strawberry          1 cup
Finely chopped pineapple           1 cup
Milk                                          2 tbsp
Olive oil                                     2 – tsp

Method
To prepare corn fritter
Take a blender, add boiled corn, sugar and blend.
Then add coconut milk and blend again.

Remove the corn mixture in a bowl, add baking powder, corn flour and mix well and make a batter and keep aside.

Now heat oil in a pan, put some batter on it and spread in round shape.

Cook it from both sides till golden brown.

Remove and cut in four pieces and place on serving plate.

To prepare tropical fruits
Chop strawberry, pineapple and put in a bowl, add milk and mix well.

Now add the prepared fruit mixture with corn fritter and garnish with chopped strawberry.

Corn Pav Bhaji

Most popular snacks pav bhaji here made with special ingredients boiled corn and fenugreek leaves then cook and mashed with other spices without onion and served with pav.

Ingredients
Capsicum                                 1
Tomato                                     2
Boiled corn                               1 cup
Asafoetida                                1 pinch
Cumin powder                           1 tsp
Turmeric powder                        1 tsp
Garam masala   powder             1 tsp
Red chilli powder                       1 tsp
Fenugreek leaves                      2 cup
Paneer                                      250 gm
Salt                                          to taste
Desi ghee                                 2 tsp
For garnish
Banana leaves
Lemon wedges
Desi ghee

Method
Finely chop the capsicum.
Heat ghee in a pan, add this chopped capsicum and cook for 2 – 3 minutes.
Chop tomato and add to capsicum and mix well.

Cook them for 4 – 5 minutes on low flame so that they can easily smash.

Then add asafoetida and mix well and add turmeric powder, cumin powder, garam masala powder, red chilli powder and mix well.

Then add some water and mix well.

Now add fenugreek leaves and mix well.

Then add chopped boiled corn, salt and stir well.

Add ghee and cook it 15 – 20 minutes and continuing smashing.

Finely chop paneer and add to corn mixture and cook for 2 minutes.

Now decorate the serving plate with banana leaves and lemon wedges and add the corn bhaji.

Garnish with ghee and serve with paw.

Palak Malai Barfi

palak malai barfi
It is a delicious sweet dish made with healthy spinach, milk and dry fruits.

Ingredients
Boiled finely chopped spinach                 1 cup
Milk                                                      1 cup
Granulated khoya                                  2 tbsp
Sugar                                                   6 – 8 tbsp
Soaked saffron in milk                            2 tbsp
Almond finely chopped                           1 tsp
Pistachio finely chopped                        1 tsp
Desi ghee                                             3 tbsp
For garnish
Silver leaf

Method
Heat desi ghee in a pan, add spinach in it ans stir for 2 – 3 minutes.
Then add milk, saffron soaked  and mix well.

Add khoya, sugar and mix well then cook for 4 – 5 minutes.

Now grease plate and sprinkle chopped almond and pistachio.

Then pour the cooked spinach on it and spread then freeze it for 2 hours.

Take out from freeze and cut in pieces.

Paneer Shashlik

Paneer shashlik is a complete meal made with marinated paneer in hung curd mixture and vegetables and served with dip and salad.

Ingredients
Paneer                                     250 gms
Onion                                       2 nos.
Red, green, yellow
bell peppers                              1 no. each
For marinating
Hung curd                                 200 gm
Garlic paste                              1 tsp
Tahini paste                              1 tsp
Spicy spicy powder                    2 tbsp
Lemon juice                              1 tsp
Black pepper powder                 1 tsp
Cream                                      1/3 cup
Salt                                          to taste
Olive oil                                    1 tbsp + for brushing    

Method
First cut the paneer in big cube otherwise grilling time it can break, cut bell peppers and onion in square slices.
Take a mixing bowl, add 1 tbsp olive oil, hung curd and mix well.

Then add garlic paste and mix and add tahini paste and mix well.

Now add spicy spicy powder and mix well.

Add black pepper powder, salt and mix well.
Then add lemon juice and mix then add cream and mix well.

Now coat well the paneer cubes with this mixture.

Now put the bell pepper slice, onion slice and paneer in skewer and place on griller.

Brush with olive oil and grill from all sides.

Once it grilled take out from skewer and put in serving skewer and serve with dip and salad.

Chickpeas Crowned Bottle Gourd

It is a unique dish made with stuffed crown shape bottle gourd pieces with delicious chickpeas mixture and sear fry in olive and sesame oil.

Ingredients
Bottle gourd                              1
Tomato                                     1
Lemon juice                              2 tsp
For paste
Boiled chickpeas                       1 cup
Roasted peanut                         ½ cup
Peanut powder                          3 - 4 tbsp
Green chillies finely chopped      3 tbsp
Black pepper powder                  to taste
Salt                                          to taste
Olive oil                                     3 – 4 tsp
For frying
Sesame oil                                3 – 4 tsp
Olive oil                                     2 – 3 tsp
Grated cheese                           2 tbsp
Black pepper powder                  2 tsp
For garnish
Peanut powder                         
Chopped green chillies
Lettuce leave chopped
Black pepper powder

Method
First peel the bottle gourd and cut in 1 and ½ inches thick pieces.
Then scoop the pieces and give crown shape to all pieces.

Then blanch the bottle gourd pieces and tomato with salt and lemon juice.

Now take a mixer and add boiled chickpeas, peanut powder, seem seeds, chopped chillies, salt, black pepper powder, olive oil and make a paste.

Now heat olive and sesame oil in a pan, add the prepare chick peas paste and stir.

Then add grated cheese and mix well, if required then add little water and mix well and remove in a bowl and let it comes in room temperature.

Then stuff the blanched bottle gourd pieces with this chickpeas mixture.

Take out the blanched tomato skin and keep aside and slice the tomato and place on serving plate.

Heat olive and sesame oil in a pan add tomato skin, pepper powder.

Then place the stuffed bottle gourd on this oil and cook for a while then sprinkle lemon juice on them.

Remove and place on serving plate on serving plate.
Garnish with peanut powder, chopped green chillies, black pepper powder, chopped lettuce leaves.
