Coconut Rice

This delicious South Indian styled coconut rice is very easy to make & tastes mind blowing if you have fresh coconut. Coconut rice is a dish prepared by soaking white rice and cooking it within coconut milk with coconut flesh. Coconut Rice is a very simple recipe and can be done by everyone.

Ingredients
Ghee                                        1 tbsp
Cashew nuts                             4 – 5 nos.
Raisins                                     8 – 10 nos.
Jaggery                                    1 tbsp
Sliced coconut flesh                  1 cup
Soaked rice                              1 cup
Coconut milk                            1 cup
Water                                       as required
For garnish
Dried grated coconut
Roasted curry leaves
Green chilli
Raisins
Cashew nuts

Method
Heat ghee in a pan, add cashew nuts, raisins and stir.

Then add jaggery and mix well.

Add sliced coconut flesh and stir well.

Add soaked rice and mix.

Then add coconut milk, some water and cover the lid and cook until done.

Open the lid and move the rice.

Now serve the rice in coconut shell.
Garnish with grated coconut, roasted curry leaves, green chillies, cashew nut and raisins.

Masala Peanut on Bread

peanut masala on bread 
Healthy breakfast with bread toast topped by cooked spicy peanut in Kerala style.

Ingredients
Chilli powder                             1 tsp
Sugar                                       1 tsp
Cumin powder                           ½ tsp
Coriander chopped                     1 small bowl
Grated coconut                          1 small bowl
Peanut                                      1 small bowl
Chopped potato                          2 tbsp
Chopped onion                           1 tbsp
Bay leaves                                 2 nos.
Green chillies                             3 - 4
Butter                                        2 tbsp
Bread slices                               2 nos.

Method
To prepare topping
Take a blender, put sugar, cumin powder, chilli powder, chopped coriander.

Then add grated coconut and blend in a paste.

Remove the paste in a bowl.

Melt butter in a pan.

Add bay leaves, chopped onion and sauté till the onion become transparent.

Then add prepared coconut paste, slit chillies and mix well.

Add little water and stir well.

Now add peanut and mix well.

Add chopped potato, salt and cook for 2 – 3 minutes.

To prepare bread toast
Heat butte in another pan and toast the bread slice.

Remove the bread and place the cooked peanut masala on it.

Cut in middle and serve hot.

Idiyappam

idiyappam 
Idiyappam is a popular string hoppers culinary speciality from the south Indian cuisine. It is a regular breakfast in our home in Kerala.

Ingredients
Soaked and dried rice               ½ cup
Oil                                            to grease
For plating
Grated coconut                         2 cup
Powdered sugar                        1 tsp
Coconut milk                             3 tsp

Method
Soak the rice and then dry them, blend the rice in a mixer into powder form and remove in a bowl.

Then add hot water and knead it and make dough.
Cover the dough with wet muslin cloth for 25 – 30 minutes and let it rest.

Now take out the cloth and fill the dough in the chakli machine.
Apply oil to the idli tray.
Now on the idli tray make idiyappam with the help of chakli machine.

Then place the idli tray in the steamer and steam the idiappam for 5 minutes.

Take out the idiyappam and place on peepal leaves.

Now add grated coconut, powdered sugar and coconut milk on idiyappam and serve.


Pesarattu

Pesarattu is a telegu cuisine that is similar to dosa. It is made with batter of green gram and doesn’t contain udar dal like dosa. It is very popular breakfast in Andhra Pradesh in India.

Ingredients
Soaked rice                              1 cup
Soaked green moong                 1 cup
Chopped onion                          1 ½ tbsp
Chopped green chillies               1 tsp
For batter
Ginger juliennes                         2 tbsp
Cumin seeds                             1 tsp
Oil                                            1 ½ tsp
To serve
Muskmelon wedge                    1 no.
Lemon wedge                           1 no.
Coconut chutney                       as required
Red chilli powder                       a pinch
For garnish
Coriander                                  1 spring

Method
Take a mixer, put overnight soaked rice and moong, chopped onion, chopped green chilli, chopped ginger juliennes, salt, cumin seeds, water and blend to a thick batter.

Then remove it in a bowl and rest it for 15 minutes for formatting.
Now add some water to batter and mix well.
Pour some batter on non-stick flat pan and spread in round shape.

Then add oil and make a roll and remove.

Place the prepared pesarattu on serving plate and serve with muskmelon wedge, lemon wedge and coconut chutney.

Garnish with coriander spring and sprinkle red chilli powder.

Coconut Cake

coconut cake 
This coconut cake recipe from South India and has a unique flavour which makes a great dessert. Very easy to prepare with rice flour, chopped coconut, coconut water and yogurt.

Ingredients
For batter
Yogurt                                      1 tsp
Coconut water                           1 cup
Brown sugar                              2 tbsp
Rice flour                                  1 cup
Finely chopped coconut              2 tbsp
Sugar and coconut syrup            as required
Mint leaves                                for garnish

Method
To prepare the batter
Take a mixing bowl, add yogurt, coconut water, brown sugar and rice flour then mix well.

Then add finely chopped coconut and mix well and let the mixture rest for 1 to 1 ½ hour.
Now pour the batter in mould and let it steam for 20 to 25 minutes.

Once cooked removed the cake from the steamer.

Then brush it with sugar syrup.

Multi Grain Idli

multigrain idli 
Idli is a traditional breakfast in south India. Now a days it  no longer just a South Indian favorite, Idlis are loved and can be found just about anywhere in India. Here this idli is very healthy preparation with jowar, ragi, rice and gram flour and serve with coriander and sesame chutney.

Ingredients
For idli
Jowar flour                                2 tbsp
Gram flour                                ½ cup
Rice flour                                  2 tbsp
Ragi flour                                  1 tbsp
Sesame seeds                          1 tbsp
Curd                                         1 cup
Baking soda                             2 tsp
Grated coconut                         1 tbsp
Salt                                          to taste
Black pepper                            to taste
For chutney
Coriander                                  ¼ bunch
Sesame seeds                          2 tbsp
Green chillies                            2 – 3 nos
Garlic cloves                             10 – 12 nos
Oil                                            1 tbsp
Salt                                          to taste

Method
Take a mixing bowl, add jowar flour, rice flour, gram flour, ragi flour, coconut, curd and mix well.
Add required water and mix it well.

Now add salt and black pepper and mix well and rest it for 15 minutes.

To make idli
Take a steamer and put mixture on it.

Cover and cook for 10 - 15 minutes.

To make chutney
Take a mixer, put coriander, green chillies, sesame seeds, garlic, salt, oil, some water and make a smooth paste.

Now remove idlis from the steamer and serve with chutney.

Makai upma

makai upma
Upma is one of the dishes from southern India and relished by everyone. This one is a slight variation from the conservative way of preparation and now try this new way to present corn to your family

Ingredients
Mustard seed                           ¼ tsp
Cumin seed                              ¼ tsp
Curry leaves                              4 – 5 nos
Grated ginger                            2 tsp
Chopped carrots                       ¼ cup
Grated coconut                         2 tbsp
Turmeric powder                        ¼ tsp
Chopped green chillies               2 tsp
Corn kernels                              1 cup
Salt                                          to taste
Black pepper                             to taste
Chopped coriander                    1 tbsp
Lemon juice                              1 tsp
For side dish
French beans                            8 – 10 nos
Grated coconut                         1 tbsp
Chopped coriander                    1 tbsp
Salt                                          to taste
Sliced coconut                          8 – 10 nos
Oil                                            1 tsp

Method
First coarsely grind the boiled corn kernels in the mixture.
Heat oil in a pan, add mustard seed and cumin seed,curry leaves and stir.

After it cooks add ginger, chopped carrots, grated coconut and mix well.

Then add green chillies, black pepper, salt, turmeric powder and mix well.
Now add grinded corn kernels and mix it.

Add required water and let it cook.

After cook add chopped coriander and lemon juice in it.

Remove in serving bowl.

To make side dish
Heat oil in same pan, add french beans, grated coconut, sliced coconut, salt and cook for a while.
