Paneer Shashlik

Paneer shashlik is a complete meal made with marinated paneer in hung curd mixture and vegetables and served with dip and salad.

Ingredients
Paneer                                     250 gms
Onion                                       2 nos.
Red, green, yellow
bell peppers                              1 no. each
For marinating
Hung curd                                 200 gm
Garlic paste                              1 tsp
Tahini paste                              1 tsp
Spicy spicy powder                    2 tbsp
Lemon juice                              1 tsp
Black pepper powder                 1 tsp
Cream                                      1/3 cup
Salt                                          to taste
Olive oil                                    1 tbsp + for brushing    

Method
First cut the paneer in big cube otherwise grilling time it can break, cut bell peppers and onion in square slices.
Take a mixing bowl, add 1 tbsp olive oil, hung curd and mix well.

Then add garlic paste and mix and add tahini paste and mix well.

Now add spicy spicy powder and mix well.

Add black pepper powder, salt and mix well.
Then add lemon juice and mix then add cream and mix well.

Now coat well the paneer cubes with this mixture.

Now put the bell pepper slice, onion slice and paneer in skewer and place on griller.

Brush with olive oil and grill from all sides.

Once it grilled take out from skewer and put in serving skewer and serve with dip and salad.

Soya Paneer Muthia / Tofu Muthia

soya paneer or tofu muthia
Tofu Muthia- An excellent Snack using  grated Tofu and binding with gram and rice flour . it is a  fusion recipe from Gujarat.

Ingredients
Chopped coriander leaves         1 tbsp
Finely chopped green chilli        2 tbsp
Baking soda                             ½ tsp
Sahi cumin seeds                     2 tbsp
Sesame seeds                         1 tbsp
Gram flour                                3 – 4 tbsp
Rice flour                                 3 – 4 tbsp
Tofu grated                               250gms
Desi ghee                                2 tsp
Salt                                         to taste
Oil                                           to fry
For garnish
Chopped chillies and hot oil mixture

Method
Take a mixing bowl, add chopped coriander leaves, chopped green chillies, baking soda, sahi cumin seeds, sesame seeds.

Add gram flour, rice flour, grated tofu, salt and mix well.

Then add ghee and mix again.

Now give the shapes of muthia from tofu mixture and deep fry on medium flame till golden brown.

Within this time take chopped chillies in a small bowl and add hot oil and mix then keep aside.
Remove tofu muthias from oil and keep on tissue.

Serve tofu muthia with chilli-oil mixture.

Paneer Do Pyaaza

This is a Punjab cuisine main course semi dry, cottage cheese curry recipe wherein amount of onion used is relatively larger compared with other main ingredients.

Ingredients
Chopped onion                          2 nos.
Chopped tomato                        2 nos.
Mustard seeds                          1 tbsp
Red chilli powder                       3 tsp
Paneer                                      200 gm
Garam masala powder               1 tsp
Salt                                          to taste
Mustard oil                                3 – 4 tbsp
For garnish
Onion rings

Method
Heat mustard oil in a pan.
Within this time, mix red chilli powder and water in a bowl to make a paste.
Now add mustard seeds in hot oil and sauté, add onion and sauté.

Then add chopped tomato and stir well.

Add the prepared red chilli paste and mix well.

Then add water in it and cook for 5 – 6 minutes.
After this add paneer cubes and mix well.

Now add garam masala powder, salt and cook for 2 – 3 minutes.

Baked Paneer Taco

A traditional food wrap from Mexico consisting of a taco shell that is filled with cabbage salad, baja sauce, delicious roasted paneer and topped with salsa.

Ingredients
Chopped cabbage                     1 cup
Onion juliennes                         1 cup
Lemon juice                              2 tsp
Salt                                          to taste
Crushed black pepper                to taste
Olive oil                                    2 tsp
Taco shells                               2 – 3 nos.
For baja sauce
Hung curd                                 1 cup
Sour cream                               2 tbsp
Red chilli powder                       ½ tsp
Salt                                          to taste
For salsa
Chopped tomato                        2 tbsp
Chopped onion                          2 tbsp
Chopped jalapenos                    1 ½ tbsp
Chopped coriander                     ¼ cup
Chopped garlic                          1 tsp
Tomato juice                              2 tbsp
Lemon juice                               1 tsp
Salt                                           to taste
For the paneer mixture
Roasted paneer with yogurt,
Gram flour and masala                100 gms
Lemon juice                               1 tsp
Oil                                            1 tsp
Salt                                           to taste
For garnish
Parsley leaves                            as required

Method
To prepare the salad
Take a mixing bowl, add chopped cabbage, onion juliennes, lemon juice, crushed black pepper, salt, olive oil and mix well.

Take another bowl, add hung curd, sour cream, red chilli powder, salt and mix well.

To prepare salsa
Take another bowl, add chopped tomato, chopped onion, chopped jalapenos, chopped coriander, chopped garlic, tomato juice, lemon juice, salt and mix well.

Take roaster cottage cheese (paneer).

Now cut the roasted paneer into strips and mix with lemon juice oil and salt.

Then take a taco shell.

Now fill with the prepared salad, prepared salsa, prepared paneer strips, prepared baja sauce and add more salad.

Make more tacos like this.
Place the ready tacos on serving plate and put baja sauce and salsa on them and garnish with parsley leaves.

Paneer Croquettes

paneer (cottage cheese) croquettes 
Croquettes made with cottage cheese, fresh vegetables, boiled potatoes and served with pickle and potato basket
 

Ingredients
Grated paneer                           ½ cup
Boiled and grated potato            1 cup
Refined flour                             1 tbsp
Chopped onion                          1 tbsp
Chopped ginger                         1 tsp
Chopped green chilli                  1 tsp
Red chilli powder                       ½ tsp
Chopped coriander                     2 tsp
Salt                                          to taste
Oil                                            to fry
Vermicelli                                 1 cup
Refined flour and water
batter                                       as required
For garnish
Cherry tomato and mustard
Pickle                                       as required
Potato basket                            1 no.
Parsley leaves                           as required

Method
Take a mixing bowl, add grated paneer, boiled and grated potato, refined flour, chopped onion, chopped ginger, chopped green chilli, red chilli powder, salt, chopped coriander and knead well.

Then make small balls of this mixture.
Put vermicelli in a bowl and crush.

Make refined flour and water batter in another bowl.
Heat oil in a pan.
Now coat the prepared croquettes in batter then roll them in crushed vermicelli.

Then fry them in hot oil until golden brown.

Remove and keep on tissue.

Now put mustard-cherry tomato pickle and potato basket on serving plate.

Then place the fried croquettes on it and garnish with pickle and parsley leaves.

Chilli Paneer

Chilli Paneer is a melt in the mouth starter with Chinese flavour,  is an all time favourite to all that is really easy to prepare.

Ingredients
Paneer (cottage cheese) cubes  250 gm
Corn flour                                  2 tbsp
Oil                                            for frying         
Salt                                          to taste
Green bell pepper                      1 no.
Onions                                      2 nos.
Green chillies                            5 – 6 nos
Chopped garlic                          3 – 4 cloves
Oil                                            1 tsp
Corn flour                                  2 tbsp
Vegetable stock                        ½ cup
Soya sauce                              1 tsp
Tomato ketchup                        1 tbsp
Vinegar                                     1 tsp
Salt                                           to taste

Method
In a bowl put paneer cubes and toss with corn flour and salt.

Deep fry this paneer until golden and keep aside.
In another bowl add corn flour, vegetable stock, soya sauce, tomato ketchup, vinegar and mix well.

Slice the capsicum and onions.

Now heat oil in a pan on high flame, add chopped garlic stir and add sliced onion and capsicum and stir well.

Now add fried paneer and toss well.

Then add the prepared soya sauce-ketchup mixture, required salt and mix well until become thick.

Remove and serve hot.

Masala Paneer Bread

Baked bread with spicy paneer mixture fillings.

Ingredients
Dry yeast                                  1 – 2 tsp
Warm water                               as required
Sugar                                        1 – 2 tbsp
Salt                                           to taste
Cottage cheese                          1 block
Mango powder                            1 tsp
Red chilli powder                         1 tsp
All ground spice                          1 tsp
Roughly chopped jalapeno            2 tbsp
For sprinkle
Rock salt
All purpose flour
Olive oil
For garnish
Jalapenos
Olive oil
Red chilli powder

Method
In a bowl mix dry yeast, warm water, sugar, salt and mix well and keep it for formatting.

Then in another bowl, add all purpose flour, rock salt, yeast mixture and mix well.
Add required water and make dough and keep aside.
In a bowl grate paneer, add mango powder, all ground spice, jalapeno, olive oil and sugar and mix all.

Now roll out the dough and sprinkle rock salt and all purpose flour over it.
Place the cheese mixture in line at middle.

Sprinkle flour and olive oil on filling.

Now fold it up-to half and cover the filling and seal it with help of little water.

Then fold both sides and fold remaining half and seal it.

Slit over it and dust all purpose flour.

Now take a mould, grease with olive oil and dust flour on it.
Then put the prepared stuffed dough in it and keep it for proofing for 20 minutes.

Now bake it at 175 degree celsius for 18 -20 minutes.

Take out from oven and place the bread on serving plate and garnish with olive oil, jalapeno and red chilli powder.
