Paneer Croquettes

paneer (cottage cheese) croquettes 
Croquettes made with cottage cheese, fresh vegetables, boiled potatoes and served with pickle and potato basket
 

Ingredients
Grated paneer                           ½ cup
Boiled and grated potato            1 cup
Refined flour                             1 tbsp
Chopped onion                          1 tbsp
Chopped ginger                         1 tsp
Chopped green chilli                  1 tsp
Red chilli powder                       ½ tsp
Chopped coriander                     2 tsp
Salt                                          to taste
Oil                                            to fry
Vermicelli                                 1 cup
Refined flour and water
batter                                       as required
For garnish
Cherry tomato and mustard
Pickle                                       as required
Potato basket                            1 no.
Parsley leaves                           as required

Method
Take a mixing bowl, add grated paneer, boiled and grated potato, refined flour, chopped onion, chopped ginger, chopped green chilli, red chilli powder, salt, chopped coriander and knead well.

Then make small balls of this mixture.
Put vermicelli in a bowl and crush.

Make refined flour and water batter in another bowl.
Heat oil in a pan.
Now coat the prepared croquettes in batter then roll them in crushed vermicelli.

Then fry them in hot oil until golden brown.

Remove and keep on tissue.

Now put mustard-cherry tomato pickle and potato basket on serving plate.

Then place the fried croquettes on it and garnish with pickle and parsley leaves.
