Sugarcane Kheer

sugarcane kheer
It is a different type of sweet dish of vermicelli cooked in healthy sugarcane juice with dry fruits.

Ingredients
Vermicelli                                  3 tbsp
Ghee                                         3 tbsp
Sugar                                        2 – 3 tbsp
Sugarcane juice                         1 cup
Cardamom powder                     ½ tsp
Chopped almond, pistachio
And cashew nuts                       3 – 4 tsp
For garnish
Cashew nut
Almond
Pistachio

Method
Heat ghee in a pan, add broken vermicelli and roast it till light brown.
Now add sugarcane juice and stir well and add sugar and cook.

Then add chopped dry fruits and mix well.

Now serve it in a bowl and garnish with dry fruits.

Corn Fritter with Tropical fruits

Traditional corn fritter made in easy way and served with fresh tropical fruits.

Ingredients
For corn fritter
Boiled corn                               2 cup
Sugar                                       3 tbsp
Coconut milk                            1 cup
Baking powder                          1  tsp
Corn flour                                  2 – 3 tbsp
For tropical fruits
Finely chopped strawberry          1 cup
Finely chopped pineapple           1 cup
Milk                                          2 tbsp
Olive oil                                     2 – tsp

Method
To prepare corn fritter
Take a blender, add boiled corn, sugar and blend.
Then add coconut milk and blend again.

Remove the corn mixture in a bowl, add baking powder, corn flour and mix well and make a batter and keep aside.

Now heat oil in a pan, put some batter on it and spread in round shape.

Cook it from both sides till golden brown.

Remove and cut in four pieces and place on serving plate.

To prepare tropical fruits
Chop strawberry, pineapple and put in a bowl, add milk and mix well.

Now add the prepared fruit mixture with corn fritter and garnish with chopped strawberry.

Palak Malai Barfi

palak malai barfi
It is a delicious sweet dish made with healthy spinach, milk and dry fruits.

Ingredients
Boiled finely chopped spinach                 1 cup
Milk                                                      1 cup
Granulated khoya                                  2 tbsp
Sugar                                                   6 – 8 tbsp
Soaked saffron in milk                            2 tbsp
Almond finely chopped                           1 tsp
Pistachio finely chopped                        1 tsp
Desi ghee                                             3 tbsp
For garnish
Silver leaf

Method
Heat desi ghee in a pan, add spinach in it ans stir for 2 – 3 minutes.
Then add milk, saffron soaked  and mix well.

Add khoya, sugar and mix well then cook for 4 – 5 minutes.

Now grease plate and sprinkle chopped almond and pistachio.

Then pour the cooked spinach on it and spread then freeze it for 2 hours.

Take out from freeze and cut in pieces.

Pineapple Strawberry Cooler

It is a cool drink or dessert with frozen pineapple and strawberry syrup.

Ingredients
Pineapple slices                        10 – 15nos
Milk                                          1 – 2 cups
Sugar                                       2 – 3 tbsp
Vanilla ice cream                       3 tbsp
Whipped cream                         2 tbsp
Strawberry syrup                       2 tbsp
For garnish
Strawberry syrup
Pineapple slices
Mint leaves

Method
First chop the pineapple slices.

Take a blender and add the chopped pineapple, milk, sugar and blend well in thick mixture.

Take another bowl, add mix vanilla ice cream, whipped cream and mix well.

Add strawberry syrup and mix well.

Take 3 serving glasses, put strawberry syrup and make a pattern then pour the prepared pineapple mixture.

Garnish the cooler with pineapple slices and mint leaves.

Coconut Custard

coconut custard
It is a simple and delicious, thick and wonderfully sweet custard pie filled with lots of coconut. It steams up beautifully with caramelized sugar with fruit.
 

Ingredients
Sugar                                       1 cup
Brown sugar                              1 tsp
Water                                        as required
Finely chopped strawberries       1 tbsp
Finely chopped kiwi                   1 tbsp
For batter
Coconut milk                             ½ cup
Sugar                                       5 – 6 tbsp
Egg yolk                                   3 nos
Cardamom powder                     ½ tsp
For garnish
Caramelized sugar
Grated coconut

Method
Take a mixing bowl, add sugar, egg yolk, coconut milk, cardamom powder.
put all batter ingredients
Then mix it well with hand blender.

Now in a pan add sugar and brown sugar then caramelize them.

Add some water and stir and add chopped kiwi and strawberries and mix well and off the oven.

Then in a custard mold first put some caramelized mixture and spread then pour the prepared batter on it.

Cover the mould with a silver foil and keep it in a hot water pan and close it with a lid.

Cook it for 10 – 15 minutes.
Remove from hot water and let it cool in room temperature then fridge it.
Take out from fridge and de-mould it.

Put some caramelized mixture on serving plate then place the custard on it and  top with remaining caramelized mixture.

Falooda

falooda
Falooda, originally an Iranian drink, distinctly flavoured with rose syrup, served with ice-cream. This is one dessert which is not to be missed.

Ingredients
Dry falooda                               as required
Rose syrup                               2 tsp
Pineapple jelly cubes                 2 tsp
Basil seeds                               3 tsp
Khus flavoured milk                    ¼ cup
Vanilla ice-cream                       1 tbsp
For garnish
Chopped mixed dry fruits             as required
Pineapple jelly cubes                  as required

Method
Take a serving glass, put dry falooda at bottom.

Then pore rose syrup on it.

Then add pineapple jelly cubes.

Add 2 tbsp basil seeds on jelly.
Then pour khus flavoured milk.

Put remaining basil seeds.
Then add vanilla ice-cream on top.

Now garnish with chopped mixed dry fruits and pineapple jelly cubes.

Ananas Ka Meetha

A delicious dessert with pineapple.

Ingredieats
Pineapple                                 1 medium
Ghee                                        3 tbsp
Sugar                                       ¼ cup
Green cardamom powder           1 tsp
Chironji                                     ¼ cup
Cashew nuts                             20
Khoya (mawa)                           2 cups

Method
Heat half the ghee in a pan, add chopped pineapple and saute for 5 minutes or till the juice is absorbed.

Now add sugar and stir until the sugar completely dissolved.
add sugar and stir 
Then add green cardamom powder and cook.
Heat the remaining ghee in another pan, add chironji and cashew nuts and sauté until golden.
Now add it to the pineapple and mix well.

Then add khoya and mix well and cook till the khoya is heated through.

Serve hot.

Mango Tart

mango tart
Mango Tarts, an instant hit at tea parties. These delicious tarts with custurd filling topped with mango slices will just melt in your mouth.

Ingredients
Tart dough                                as required
Refined flour                             500gm
Butter                                       150gm
Kidney beans                            1 cup
Mango                                      1 no.
For custard
Milk                                          250 ml
Sugar                                       ½ cup
Custard                                     as required
Butter                                       2 tbsp

Method
Prepare the dough
Mix refined flour with butter and make dough with required water.
Then roll out the dough and cut with ring cutter.

Now put the flat round in the tart moulds and trim the sides.
put the round dough on tart mould and cut the sides 
Then put kidney beans in the tart mould to give the shape to tart.

Bake the tarts for 7 – 8 minutes at 200 degree celsius.
To prepare custard
Boil milk in a pan, add sugar and mix well.
Mix custard powder with milk in a bowl and pour into boiling milk and keep stirring.

Stir until it becomes thick.

Remove the custard in a bowl and keep it aside to cool.

Then mix the butter with custard and mix well.

Then put the prepared custard in the piping bag.

Now remove the kidney beans from the tart and fill the tarts with the custard with the help of piping bag.

Then peel the wipe mango and cut into wedges

Now place them on the tart.

Serve the tart with mint leaves.
