Red snapper
(Lutjanus campechanus) are one of the Gulf of Mexico's signature fish. They are extremely
popular for firm texture and nutty flavor. Grilled red snapper is grilled with
lemon and black pepper and served with creamy dip and blanched vegetable. So it
is a very healthy and easy to prepare Mexican dish.
Ingredients

Cream 3
– 4 tbsp

Red
chilli powder ½ tsp

pepper powder ½ tsp
Salt to
taste

vegetable
Potato
chopped 3 – 4
Coriander
leaves 1 tbsp
Baby
corn chopped 3 – 4
Chopped
broccoli floret 3 – 4
Chopped
carrot 3 – 4
Zucchini 3
– 4
Olive
oil 2 tbsp

Method
For marinate
Take fish pieces in a bowl, add black pepper
powder, thyme, salt and lemon juice and mix well and keep aside.
For dip
Melt butter in a pan.

Then add cream and mix well.

Add salt, white pepper, parsley and mix well
and cook for while on low flame.

For fish
Heat olive oil in another pan, add fish on it
and cook from both sides for 3 – 4 minutes.

Then remove on serving plate.

Now add chilli powder in cream mixture and
mix well. Switch off oven.

For vegetable
In the same oil of grill fish, add all blanched
chopped vegetable, salt and toss well.
Serve beside fishes and pour the prepared
cream mixture over fish.
Garnish with lemon wedges and coriander
leaves.
