Tofu Stew

tofu stew
It is a very nutritious stew with soya tofu and healthy vegetables.

Ingredients
Tofu cubes                                1 small bowl
Chopped carrot                          50 gm
Chopped cauliflower                   50 gm
Chopped zucchini                      50 gm
Chopped tomato                        50 gm
Chopped eggplant                      50 gm
Chopped potato                         50 gm
Basil                                         4 – 5 leaves
Dill bid                                      2 tsp
Salry                                        2 tsp
Onion chopped                         1 tbsp
Garlic chopped                         1 tsp
Tomato puree                            2 tbsp
Sugar                                       ½ tsp
Vinegar                                     1 tsp
Salt                                           to taste
Olive oil                                     1 tsp
           
Method
Heat oil in a deep pan, add garlic and onion then sauté.

Now add cauliflower, eggplant and mix well.

Then add carrot and stir well.

Add potato, zucchini and mix well.

Now add chopped tomato and stir well.

Add tofu, tomato puree, salt and mix well.

Add required water and cover cook for 5 minutes.

Remove in serving plate, garnish with basil and dill bid.
