Ingredients
Boneless chicken (cut into strips)           100 gms
Prawns                                                 12 medium
Chicken stalk                                        1 cup
Coconut milk                                         1 cup
Noodles boiled                                       1 cup
For laksa paste
Whole dry red chillies (soaked)                6
Shallots                                                 12
Garlic                                                    4 cloves
Turmeric powder                                     ½ tsp
Galangal chopped                                   I inch pieces
Roasted peanuts                                    2 tbsp
Salt                                                       to taste
Olive oil                                                 3 tbsp
For garnish
Bean sprouts                                         ½ cup
Fresh mint leaves chopped                      6
Onion sliced and deep fried                     1 small
Lemon  sliced                                        1
Lemon grass                                         1 stalk

Method
To prepare laksa paste
First remove the seeds from soaked dry red chillies and put into mixer jar, add 10 shallots, garlic, lemon grass, chopped galangal, peanuts, turmeric powder, salt, 1 tbsp oil, little water and grind in a smooth paste.

Heat 2 tbsp oil in a pan, add chicken and sauté.
Then add laksa paste and stir.

Now add chicken stock and let it boil.

Then add prawns and cook for a minute.

Add coconut milk and mix well.

Then cook till chicken and prawn both are done.
Now put the boiled noodles in serving bowl and pour the laksa over it.

Then top with bean sprouts, chopped shallots, fried onions, mint leaves, lemon slices and serve hot.
