Mexican Nachos Soup

Crispy fried naan juliennes in a tomato-based Mexican soup with kidney beans and corns and served with Nachos.

Ingredients
Chopped onion                          ¼ cup
Chopped garlic                          1 tsp
Chopped ginger                         1 tsp
Red chilli powder                       1 tsp
Cumin powder                           1 tsp
Boiled red kidney beans             1 cup
Corn                                         ½ cup
Chopped green chillies               1 tsp
Green olives                              ¼ cup
Tomato juice                             2 cups
Chopped celery                         1 – 2 tbsp
Salt                                          to taste
Oil                                            1 ½ tsp
For plating
Naan                                         as required
Oil                                            to fry
For garnish
Nachos                                     as required
Cheese                                     to taste
Coriander                                  1 spring

Method
Heat oil in a pan, add chopped garlic, chopped ginger, chopped onion and sauté.
Add red chilli powder, cumin powder and mix.

Now add boiled red kidney beans and mix well.

Add corn, chopped chillies and mix well.

Then add tomato juice, required water, salt and mix well.

Add chopped celery and let it boil.

Within this time chop naan into juliennes.

Fry them in hot oil and remove in a tissue.
Serve the prepared soup in a bowl and garnish with fried naan, nachos and coriander spring.

Apple Pumpkin Soup

Apples add just a hint of sweetness to this healthy velvety pumpkin soup. Try it as a delightful first course for a special meal served with garlic bread.

Ingredients
Chopped onion                          1 tbsp
Chopped garlic                          1 tsp
Chopped ginger                         1 tsp
Red chilli powder                       1 tsp
Turmeric powder                        1 tsp
Coriander powder                       1 tsp
Crushed black pepper                 to taste
Chopped apple                          1 cup
Salt                                          to taste
Oil                                            1 tsp
Chopped pumpkin                      1 cup
Oatmeal                                    1 – 2 tbsp
For garnish
Crushed black pepper                 to taste
Chopped celery                          1 tbsp
Parmesan cheese                       to taste
Garlic bread                               as required
Degi mirch                                 a pinch
Olive oil                                     as required
           
Method
Heat olive oil in a pan, add chopped garlic chopped ginger, chopped onion and sauté.
Then add chilli powder, turmeric powder, coriander powder, crushed black pepper and mix well.
Add chopped apple and stir well.

Then add water and cover - cook for 5 – 7 minutes.

Open cover and keep aside some of this mixture in a small bowl for garnish.

Now blend the pan mixture with water.

Pour this stained soup in pan and boil.

Add oatmeal, crushed black pepper, chopped celery, parmesan cheese and salt and let it cook.

Remove the soup in a bowl.
Now mash the remaining pan mixture with parmesan cheese and chopped celery.

Then put the mixture in a ring mould and prepare a timber.
Place it in a soup bowl and serve garlic bread in a plate.

Pour the soup in the bowl from the sides of the timble and decorate with lemon wedge, degi mirch and celery.

Watermelon gazpacho

watermelon gazpacho 
The delicate flavors of watermelon and cucumber go hand in hand to create a sweet-and-savory soup. Watermelon gazpacho or cold watermelon soup is a fast and easy way to enjoy fresh fruits and vegetables. This no-cook recipe is perfect for summertime meals.

Ingredients
Watermelon pieces                    1 ½ cup
Tomato juice                              1 ½ cup
Chopped bell peppers                 1 cup
Cucumber pieces                       1 cup
Cumin powder                            1 tsp
Lemon juice                               ½ no.
Soaked bread                            1 cup
Salt                                           to taste
For garnish
Chopped watermelon                  1 tsp
Chopped mint leaves                  1 tsp
Chopped plum                           ½ no.
Olive oil                                     1 tsp
Crushed black pepper                 to taste
Lemon wedge                            1 no.
Salt                                           to taste
Popcorn                                     as required

Method
Take a blender, add watermelon pieces, tomato juice, bell pepper pieces, cucumber pieces, soaked bread, cumin powder, lemon juice, salt and blend it well.

Then stain the mixture and remove in a bowl.

Pour the soup in serving bowl, garnish the soup with olive oil, chopped plum and chopped mint leaves.

Cut one watermelon piece and apply salt and crushed black pepper and place on plate with soup.

Tawa Sabzi

tawa sabzi 
Very healthy vegetable dish stuffed with spices and roasted in minimum oil.

Ingredients
Cumin seeds                             1 tsp
Coriander seeds                         2 tsp
Fennel seeds                             2 tsp
Nigella seeds                             ½ tsp
Fenugreek seeds                       ½ tsp
Eggplant                                   5 – 6 nos.
Potato                                      1 no.
Boiled yam                                4 nos.
Lady finger                                200 gms
Ivy gourd                                   200 gms
Boiled and peeled
Bitter gourd                               200 gms

Method
Heat a dry pan, add cumin seeds, coriander seeds, cumin seeds, fennel seeds, nigella seeds and roast on low flame till smell comes out.

Then put in a mixer and make a smooth powder and remove in a bowl.
Then add chilli powder, coriander powder and mix well.

Now slit all peeled vegetables up-to half.

Heat mustard oil on big tawa and place the stuffed vegetables on hot oil.

Then roast add vegetable from all sides on low flame.

Dal Amritsari

Dal Amritsari or Langarwali dal is popular among Punjabi dal recipes served in the Gurudwaras, is a spicy black and bengal gram dal flavoured with coriander leaves.

Ingredients
Split skinless black gram           1 cup
Turmeric powder                        2 tsp
Salt                                          to taste
Oil                                            1 tbsp
Long sliced ginger                      2 tsp
For tarka
Oil                                            3 tbsp
Asafoetida                                 ½ tsp
Cumin seeds                             1 tsp
Sliced onion                              1 no.
Turmeric powder                        1 tsp
Red chilli powder                        2 tsp
Sliced tomatoes                        2 nos.
Salt                                          to taste
Sliced green chillies                  4 – 5 nos.
Long sliced ginger                     2 tsp
Garam masala                          1 tsp
Lemon juice                              1 tbsp
Chopped coriander                     ¼ cup

Method
Heat water in a pan, add soaked split skinless black gram, turmeric powder, ginger, salt then cover and cook for 6 – 8 minutes.

Within this time heat oil in a pan, add asafoetida, cumin seeds, onion and sauté.

Then add turmeric powder, chilli powder, and mix well.

Now add tomato, ginger, green chillies, salt and mix well.

Then add garam masala and mix well.

Now open the dal cover and add this tarka into dal mix well and cook for 2 – 3 minutes.

Add chopped coriander leaves, lemon juice and mix well and remove from oven and serve.

Gatte ki Subzi

Gram flour dumblings curry is a famous dish from the land of Rajasthan and an amazingly mouth watering dish that you just can't resist.

Ingredients
For dough
Gram flour                                1 cup
Carom seeds                            ½ tsp
Red chilli powder                       ½ tsp
Salt                                          to taste
Oil                                            1 tsp
Curd                                         2 tsp
For curry
Asafoetida                                1 tsp
Cumin seeds                             1 tsp
Red chilli powder                       1 tsp
Turmeric powder                        ½ tsp
Butter milk                                1 cup
Salt                                          to taste
Chopped coriander                    for garnish
Oil                                            2 tbsp

Method
To prepare dough
Take a mixing bowl, add gram flour, carom seeds, red chilli powder, salt, curd, oil and mix well.

Then knead well with required water and make dough.
Roll the dough in a long cylinder, cut it into few parts.

Now boil water in a pan and add these parts.

Boil for few minutes then take out from water and let them dry.

To prepare curry
Heat oil in a pan, add asafoetida and cumin seed and stir.

Add red chilli powder, turmeric powder.
Now cut the boiled cylinder in small pieces and add into pan and mix well.

Then add butter milk (if not available- then beat curd with water), salt and cook for 5 minutes.
