Apples add
just a hint of sweetness to this healthy velvety pumpkin soup. Try it as a delightful first course for a special meal served with garlic bread.
Ingredients
Chopped onion 1 tbsp
Chopped garlic 1 tsp
Chopped ginger 1
tsp
Red chilli powder 1 tsp
Turmeric powder 1 tsp
Coriander powder 1 tsp
Crushed black pepper to taste
Chopped apple 1 cup
Salt to taste
Oil 1 tsp
Chopped pumpkin 1 cup
Oatmeal 1 – 2 tbsp
For garnish
Crushed black pepper to taste
Chopped celery 1 tbsp
Parmesan cheese to taste
Garlic bread as
required

Method
Heat olive oil in a pan, add chopped garlic
chopped ginger, chopped onion and sauté.
Then add chilli powder, turmeric powder,
coriander powder, crushed black pepper and mix well.
Add chopped apple and stir well.

Add chopped pumpkin, salt and mix well.

Then add water and cover - cook for 5 – 7 minutes.

Open cover and keep aside some of this mixture in a small bowl for
garnish.

Now blend the pan mixture with water.

Then stain the blended mixture.

Pour this stained soup in pan and boil.

Add oatmeal, crushed black pepper, chopped
celery, parmesan cheese and salt and let it cook.

Remove the soup in a bowl.
Now mash the remaining pan mixture with
parmesan cheese and chopped celery.

Then put the mixture in a ring mould and
prepare a timber.
Place it in a soup bowl and serve garlic bread
in a plate.

Pour the soup in the bowl from the sides of
the timble and decorate with lemon wedge, degi mirch and celery.
