Very
healthy vegetable dish stuffed with spices and roasted in minimum oil.
Ingredients
Cumin
seeds 1 tsp
Coriander
seeds 2 tsp
Fennel
seeds 2 tsp
Nigella
seeds ½ tsp
Fenugreek
seeds ½ tsp
Eggplant 5 – 6 nos.
Potato 1 no.
Boiled
yam 4 nos.
Lady
finger 200
gms
Ivy
gourd 200
gms
Boiled
and peeled
Bitter
gourd 200
gms
Method
Heat
a dry pan, add cumin seeds, coriander seeds, cumin seeds, fennel seeds, nigella
seeds and roast on low flame till smell comes out.

Let
it cold.
Then
put in a mixer and make a smooth powder and remove in a bowl.
Then
add chilli powder, coriander powder and mix well.

Now
slit all peeled vegetables up-to half.

Then
put the mixture powder into them.

Heat
mustard oil on big tawa and place the stuffed vegetables on hot oil.

Then
roast add vegetable from all sides on low flame.

plate them and serve.
