Thai style spring rolls, also called fresh rolls, are very easy and quick to
prepare. This spring roll recipe
is vegetarian with tofu.
Ingredients
For batter
Corn flour 1
cup
Refined flour 1
cup
For stirring
Sugar 2 tsp
Soya sauce 2
tbsp
Lime juice 2
tbsp
For filling
Oil 2 tbsp
Chopped garlic ½ tsp
Chopped onion 1 no.
Chopped dry chillies 1 – 2 nos.
Mix vegetables as
required
Chopped mushrooms 200 gms
Sliced tofu 200
gms
Chopped cabbage 1 ½ cup
Basil leaves few
Sprout moong 1
cup
Salt to taste
For roll
Refined flour
paste as required
Oil for frying
Method
To prepare batter
In a bowl mix corn flour and refined flour
with water.

Heat a non-stick pan and put little oil.
Pour some batter with spoon and spread all
over pan and make a thin sheet.

Make few sheets like this.
To prepare filling
Chop all vegetables.

In a bowl mix sugar, soya sauce, lime juice
and mix well.

Heat oil in a pan on high flame add chopped
garlic, chopped onion, chopped dry chillies and stir.

Then add all vegetables and mix well.

Add tofu and stir well.

Then add soya sauce mixture and toss well and
remove from oven.

Now place filling on prepared sheet and fold
the sheet from both sides.

Then roll it tightly and seal it with the help
of refined flour-water paste.

Prepare more rolls like this and keep aside.
Heat oil in a pan and deep fry the rolls until
golden.

Remove and keep on tissue.

Cut them diagonally and place on serving
plate and garnish with spring onion.
