Stuffed Capsicum

Stuffed Capsicum is a simple to prepare but very tasty dish, stuffed with the spicy mixture of bell peppers, rice and herbs.

Ingredients
Capsicum                                 2 nos.
Oil                                            to brush
For filling
Finely chopped garlic                 1 tsp
Finely chopped onion                 1 tbsp
Finely chopped red, green,
yellow bell peppers                    1 cup
Boiled rice                                1 cup
Red chilli powder                       ½ tsp
Chilli flakes                               1 tsp
Finely chopped mint leaves        1 tsp
Finely chopped coriander leaves 1 tsp
Finely chopped basil leaves        1 tsp
Grated cheese                           2 tbsp
Salt                                          to taste
Oil                                            3 – 4 tbsp                    
For garnish
Parsley

Method
First cut the little portion of capsicum then scoop out the inside seeds.

Then cut at bottom portion to stand.

Brush them with oil and keep aside.

To prepare filling
Heat oil in a pan, add chpped garlic, onion and sauté.
saute the onion and garlic 
Then add chopped bell peppers and mix well.

Now add boiled rice and stir well.

Add salt, red chilli powder and mix well.
add spices 
Then add chopped basil, coriander, mint and toss well and off the oven.
add herbs 
Now stuff the capsicum with this prepared mixture.

Top them with grated cheese and place on baking tray.
bake the stuffed capsicum
Then bake them in 180 degree celsius preheated oven for 5 – 7 minutes.
Take out and place them on serving plate with tomato garlic sauce and garnish with chopped parsley.
