Mixed vegetables
cooked in a tangy and fragrant coconut
kadhi with tamarind pulp.
Ingredients
Potatoes (1 inch pieces) 2
medium
Cauliflower 8 florets
Carrots (1 inch pieces) 2
medium
Red pumpkin (1 inch pieces) 100 gms
Papdi (1 inch pieces) 10
Gram flour (besan) 2 tsp
Salt to taste
Turmeric powder ½ tsp
Coconut milk 2
cups
Oil 3 tbsp
Mustard seeds ½
tsp
Cumin seeds 1
tsp
Split black gram 1
tsp
Whole dry red chillies 3
Curry leaves 10
Garlic (crushed lightly) 10
cloves
Tamarind pulp 2
tbsp
Method
Take a mixing bowl, add gram flour, turmeric
powder, coconut milk and ½ cup of water, salt and mix well then keep aside.
Now heat oil in kadai, add mustard seeds,
cumin seeds, dry red chilli, split black gram, curry leaves, slightly mashed garlic
and stir well.

Then add chopped potatoes, cauliflower and
mix well.

Then add carrot, pumpkin, salt and cook for 4
minutes on high heat.

Now add the prepared gram flour mixture and
stir well, cook it till thickens.

Then add broad beans

Add tamarind pulp and
mix well, simmer for a minute.

Serve hot with steamed rice.
