Cheesy Potato Skins

Whether you have these for snacks or serve them at your next party, there's nothing quite as satisfying as a crispy potato skin topped with corn and bell pepper mixture and cheese.

Ingredients
Potato                                      1 no.
American corn                           1 cup
Oil                                            2 tbsp
Chopped red bell pepper             1 no.
Chopped yellow bell peppers       1 no.
Chopped green bell peppers        1 no.
Chopped onions                         2 nos.
Salt                                          to taste
Black pepper                             to taste
Chopped green chillies               1 no.
Grated mozzarella cheese         1 cup

Method
First cut the potato with the skins.

Heat oil in pan and sauté the potato skins until golden brown.
fry the potato skins
Remove in a plate.
Now sauté the onion in the same pan, add red yellow green bell peppers and stir.
saute the onion with bell peppers
Add American corn and mix well.
Then add chopped green chillies, pepper powder, salt and mix well.

Now place the potato skins on serving plate

Then put the vegetable mixture on them.

Add grated cheese and serve hot.
