Bharwa Lauki is a popular,
delicious vegetarian royal preparation of Rajasthan. It is a
recipe of bottle gourd stuffed with a low fat paneer mixture and cook in a spicy khoya and curd gravy.
Ingredients
Bottle gourd 1

Oil for deep fry
For stuffing
Boiled potato 1

Grated paneer 1

Black pepper powder ½ tsp
Salt to

Cinnamon powder ½ tsp
Coriander leaves a few
For gravy
Desi ghee 1
tbsp
Cinnamon stick 1 no.
Black pepper corn few
Green cardamom 3 nos.
Khoya 2 tbsp
Curd ½ cup
Cinnamon powder ½ tsp
Fresh cream 2
tbsp
Oil 1
tbsp
Salt to
taste
For garnish
Chopped almond
Method
First peel the bottle gourd and cut in three
parts.

Then make a hole at middle with help of cutter.

Then deep fry them until light golden and remove on tissue.

To prepare the stuffing
Take a mixing bowl, add mash boiled potato,
grated paneer, black pepper powder, cinnamon powder, salt, finely chopped coriander leaves
and mix well.

Now stuff the fried bottle gourd with this prepared mixture and carefully cut them in thick slices.

To prepare the gravy
Heat ghee in a pan, add cinnamon, cardamom,
black pepper corn and stir.

Now add khoya then brake and mix well.
Then add curd and stir well and add cinnamon
powder and mix well.

Now add stuffed sliced bottle gourd and
carefully cover with gravy and cook for 2 minutes.
