An empanada is a stuffed bread or pastry
baked or fried in many countries in Southern Europe, Latin America, South-western United States. Here
in Indian twist the stuffing make with leftover sabzi and nuts.
Ingredients
For filling
Leftover sabzi 1 cup
Pine nuts ¼
cup
For dough
Orange juice ¼
cup
Yeast 1 tsp
Yellow food colour 2 tbsp
Refined flour 2
cups
Oil 1 tsp
Refined flour to
dust
For sauce
Mayonnaise ½
cup
Chilli sauce ¼
cup
For garnish
Rice papad 8
– 10 nos.
Celery as required
Method
To prepare filling
First chop the leftover vegetable.
Then chop pine nuts and mix it with the
vegetable and remove in a bowl.
To prepare dough
Take a mixing bowl, add orange juice, water, yeast,
yellow food colour and mix well.

Then add refined flour and knead to dough,

Apply oil to the dough and knead again and rest it for 10 – 15 minutes.

Now make dumplings of the prepared dough then
dust refined flour over it and roll it to thin sheet.
Then with the help of ring cutter cut it into
circle shape.

Wet the edges of the circle shape sheet and
stuff the vegetable and pine nuts mixture in it and seal with the help of a
folk.

Now take a baking tray and dust refined flour
then place the prepared empanadas on it.

Brush the empanadas with oil.
Then brush the empanadas with oil and bake
the empanadas in microwave oven at 180 degree celsius for 10 – 12 minutes.
Once baked take out the subzi empanadas from
oven and glaze them with oil.

To prepare sauce
Mix mayonnaise and chilli paste in a bowl.
Decorate the plate with the prepared sauce and
place the baked empanadas.

To garnish, place celery on the rice papads
and place it on empanadas and glaze with olive oil.
