quesadillas |
Mexican quesadilla is a flour tortilla or a corn tortilla filled with a tasty
filling and cheese.
Ingredients
Tortilla or roti 4 nos.
For filling
Cumin seeds 1
tsp
Sliced onion ½
cup
Sliced bell peppers ½ cup
(green, red, yellow)
Oil 1
tbsp
Chopped red chilli ½ tsp
Salt to
taste
Crushed black pepper to taste
Red chilli powder 1 tsp
Cumin powder 1
tsp
Coriander powder 1 tsp
Sliced green olives 1 tbsp
Tomato puree ½
cup
Chopped coriander 2 tbsp
For garnish
Tomato sauce as
required
Coriander leaves as required
Parsley leaves as required
Method
To prepare filling
Heat oil in a pan, add cumin seeds, sliced
onion and stir.

Then add bell peppers and stir well.

Add red chilli chopped, crushed black pepper,
red chilli powder, cumin powder and chopped coriander then mix well.

Add sliced olives and mix well.

Then add tomato puree and mix well. Remove
from oven.

Arranging
Heat oil in a pan and roast the tortilla or roti.
Put some filling and cheese on it and cover
with another roti.

Turn the roti on the other side and again put
cheese and filling on the top. Cover with another roti

Take crumble jack cheese and put on top of
roti cover this with another roti, turn it and let it roast.

Now top it with crumble cheese and coriander.

Take it out and cut it into four equal parts.

Now stack one part on the serving plate and
put a satay stick in it.

Then put the sauce of the filling on it.
Put sauce on plate and garnish with coriander
and parsley leaves.
