This coconut ice recipe is easy to make,
very pink and delicious to eat. Traditional
pink and white coconut ice is a family favourite.
Ingredients
Desiccated coconut 3 cup
Condensed milk 400
gm
Vanilla bean ½
no.
Icing sugar 1
½ tbsp
Rose petals 6
– 7 nos
Pink food colour ½
tsp
For garnish
Rose petals as
required
Method
Finely chop the rose petals.

Then scrape out the vanilla bean.

Mix pink food colour in water and keep aside.
Take a bowl, add desiccated coconut,
condensed milk, vanilla bean, icing sugar and mix well.

Make two parts of this mixture and keep in
another bowl.

In one part add chopped rose petals, pink
food colour mixture and mix it well.

Keep the other part vanilla flavoured.
Take a parchment paper spread the vanilla
mixture on it and place the pink mixture over it and press down.

Now roll it from both sides and refrigerate
it for hours.

After it is set discard the sides.

Cut it
into slices.

Decorate the serving plate with rose petals
and place the pink coconut ice and serve.
