Gujrati Baked Yam mixture

gujrati baked yam 
Gujarati oondhiya baked with peas and served with delicious chutneys and sauces.

Ingredients
For yam mixture
Boiled yam pieces                     ½ no.
Oil                                            1 ½ tbsp
Mustard seeds                          ½ tsp
Curry leaves                              10 – 15 nos.
Grated coconut                         1 tbsp
Turmeric powder                        ½ tsp
Red chilli powder                       ½ tsp
Salt                                          to taste
Lemon juice                              ½ no.
For green peas mixture
Green peas                               1 cup
Ginger garlic paste                    1 tsp
Ghee                                        2 tbsp
Cumin seeds                             ½ tsp
Salt                                          to taste
Red chilli powder                       1 tsp
Chopped coriander                     2 tbsp
For sauce
Coconut milk                             2 cups
Refined flour                              1 ½ tbsp
Cumin seeds                             ½ tsp
Ghee                                        1 ½ tbsp
Green chutney                           1 tbsp
Salt                                           to taste
Green chilli paste                       ½ tsp
For garnish
Sweet potato chips
Red amaranth leaves                  1 no.
Salt                                           to taste

Method
To prepare yam mixture
Heat oil in a pan, add mustard seeds and curry leaves then sauté.

Add grated coconut, turmeric powder, red chilli powder and mix well.
add all spices 
Add boiled sliced yam, salt, lemon juice and mix well then remove from oven.

To prepare green peas mixture
Heat ghee in another pan, add cumin seed then green peas, ginger garlic paste and mix well.

Now add chilli powder, chopped coriander and mix well, then mash the mixture.

For baking
Take a baking bowl, first make a layer with half yam mixture then make a layer of green peas mixture on it.

Now again make a layer of remaining yam mixture on peas layer.

Then pour some milk over it to make it juicy.

Now keep baking bowl in microwave oven at 180 degree celsius for about 10 minutes.
Once baked, remove the bake bowl from the oven.
To prepare sauce
Heat ghee in a pan, add cumin seed, refined flour and stir well.
Now add coconut milk and mix well.

Then add green chutney, salt, green chilli paste and mix well.

Now put some sauce over baked yam and remaining serve in a bowl.

Garnish with sweet potato chips and red amaranth leaves applied salt and lemon juice.
