American Corn Stuffed Rice Poodle

It is a Mexican breakfast, cooked rice pancake stuffed with corn mixture and served with Mango Chunda pickle another favourite among Gujratis.

Ingredients
For batter
Boiled rice                                1 cup
Curd                                         2 tbsp
Gram flour                                 ½ cup
Wheat flour                                ½ cup
Ginger garlic paste                     2 tbsp
Red chilli powder                        ½ tsp
Turmeric powder                         ½ tsp
Powdered sugar                         1 tsp
Salt                                           to taste
Chopped coriander                     1 tbsp
Green chilli                                1 no.
Baking soda                              1 tsp
Oil                                            1 tsp
For filling
Corn                                         1 cup
Tomato                                     1 no.
Green chutney                           1 tbsp
Green chilli                                1 no.
Salt                                           to taste
Chopped coriander                     1 tbsp
Chunda                                      to serve
For garnish
Red chilli powder                         a pinch
Garlic green stalk

Method
To prepare batter
Take a blender, put boiled rice, curd some water and blend it.

Then take a mixing bowl, add gram flour, wheat flour, ginger garlic paste, red chilli powder, turmeric powder, powdered sugar, salt, chopped coriander, chopped green chillies into bowl and mix well.
add all ingredients with gram flour 
Add rice mixture and mix well.

Then add required water, baking soda, oil and mix well and rest it for 6 – 8 minutes.

To prepare filling
Take another bowl, add sweet corn, finely chopped tomato, chopped green chilli, green chutney, chopped coriander and mix well.

Now on a hot pan pour some rice mixture and make poodle and put some prepared filling on it.

Then fold all.

Place the prepared poodle on the serving plate.

Serve with chunda, sprinkle red chilli powder and decorate with garlic green stalk.
