Baghare baingan

baghare baingan
It is one of the most famous dish from Hyderabad cuisine. Hyderabadi Baghare Brinjal has its unique taste with peanuts, tamarind.

Ingredients
Small brinjal                              500 gm
Peanut                                      2 tbsp
Green chilli chopped                  ½ tsp
Mustard seeds                          ½ tsp
Tamarind pulp                           1 small bowl
Turmeric powder                        ½ tsp
Whole red chilli                          2
Chopped onion                          2 tbsp
Fenugreek (methi) seeds            1 tsp
Cumin powder                           ½ tsp
White sesame                           1 tsp

Method
Heat oil in a pan, add white sesame, peanut, red chillies and roast for a while.

Heat oil in another pan, add fenugreek seeds, mustard seeds, curry leaves and sauté.

Then add chopped onion, green chillies, cumin powder stir well
Add roasted peanut, tamarind pulp, turmeric powder and mix well.

Now add eggplant, salt then cover cook for 5 minutes.

The curry is ready to serve.
