It is Italian sandwich with basil and spinach.
Ingredients
Basil leaves 15 - 20
Spinach leaves 5 - 6
Garlic cloves 3 -
4
Walnuts 4 - 5
Parmesan cheese 3 tsp
Olive oil 2 tbsp
Crushed black pepper as
required
Salt to
taste
Pita bread 4
Sun dried tomatoes 5 - 6
Grated mozzarella cheese as required
Butter 1

Oil to pan sear 1

For filling
Tomatoes 2
Red bell pepper juliennes ¼ cup
Grated mozzarella cheese 1 tbsp
Onion slices ¼ cup
Jalapenos 1 tsp
Crushed black pepper as
required
Olive oil 1 tsp
Salt to
taste
Basil leaves 5 - 6
For garnish
Red bell peppers sauce as
required
Method
To make the pesto sauce
Take
a blender add basil leaves, spinach leaves, garlic cloves, walnuts, parmesan
cheese, olive oil, crushed black pepper and salt then blend.

To make the filling
Take
a bowl add a little of the prepared pesto sauce.
Cut
the tomatoes and add it to the bowl, then add the red bell pepper juliennes,
grated mozzarella cheese, onion slices, jalapenos, crushed black pepper, olive
oil, salt and basil leaves and mix well. Let it marinate for 3 – 5 minutes.

Now
cut the pita bread from the center.

Apply
pesto sauce on the base and add the sun dried tomatoes.

Now
add the filling from bowl, grated mozzarella cheese and a bit of the pesto
sauce.

Then
cover with the top part of the pita bread.
Add
butter and oil in a grill pan.
Place
the panini sandwich then press by spatula.

Add
the red bell pepper sauce and pesto sauce on a plate and place the panini
sandwich beside it and serve hot.
