Stuffed
eggplant is a delicious dish of egg plant. Who don’t like eggplant they also
will love it.
Ingredients
Eggplant 1
Boiled
potatoes 2
Olive
oil 2 tsp
Onion
chopped ½ cup
Garlic
chopped 1 tsp
Kashmiri
red chilli powder ½ tsp
Cumin
powder ½ tsp
White
pepper powder ½ tsp
Black
pepper powder to taste
Processed
cheese 2 tbsp
Egg 1
Olive
oil 1
tsp
Cheese few
Bread
crumbs ½ cup
Black
pepper powder to taste
Salt to
taste
Method
First
cut eggplant in half.
Boil this eggplant in water until soft.

In
the mean time mash the boiled potato in a mixing bowl.
When
white portion will soft, remove them in a plate.

Now
scoop out the white portion and keep aside.

Heat
oil in a pan, add chopped onion and sauté.
Now
add chopped garlic and stir and add the scoop out portion of eggplant and mix well.

Add
kashmiri red chilli powder, cumin powder, black pepper powder and salt and mix
well.

Now
remove the mixture and add in the bowl with mashed potato.

Then
add grated cheese, white pepper powder and mix well.

Now
stuff the eggplant with the mixture.

In
a plate mix grated cheese and bread crumb.

Put
this bread crumb mixture on stuffed eggplant.

Keep
the stuffed eggplant in a greased baking tray and grill stuffed eggplant for
2-3 minutes in 180 degree centigrade in oven.
Once
the upper portion become brown, remove them from oven.
Decorate
the serving plate and place the stuffed eggplant.
