Eggplant peanut curry

eggplant peanut curry
Tasty curry cooked with small eggplant in peanut gravy.

Ingredients
Eggplant                                   4 small
Oil                                            for frying
For gravy
Peanut                                      2 tbsp
Sesame seed                            1 tsp
Cumin seed                               ½ tsp
Coriander powder                       1 tsp
Poppy seeds                             1 tsp
Chopped coconut                       ¼ cup
Black mustard seed                   ½ tsp
Onion seed                               ¼ tsp
Red chilli                                   2
Curry leaves                              few
Red chilli powder                       1 tsp
Turmeric powder                        1 tsp
Oil                                            2 tsp

Method
First heat oil on pan, add peanut and roast.

Then add cumin seeds, coriander seeds, sesame seeds, poppy seeds and chopped coconut and roast for 2 minutes. Remove and let it cold.

Within this time heat oil in a pan and deep fry the eggplant and remove.

Once peanut cold, grind it in a smooth paste.
Now heat oil in a pan, add black mustard seed, dry red chilli, onion seed and sauté.
Then add curry leaves, peanut paste and mix well.

Now add turmeric powder and chilli powder and mix well and cook for a minute.
add dry powder in peanut mixture
Add required water for gravy and salt and mix well.
Now add fried eggplant and cover for 2-3 minutes or until cook.

Remove and garnish with coriander leaves.
