Grilled aubergines parcels

grilled aubergines (eggplant) parcel
It is Italian dish with eggplant. It gives a very unique taste. Try it.

Ingredients
For parcel
Eggplant                                   2
Tomato sliced                           2
Cheese sliced                           4
Salt                                          to taste
Oil                                           1 tsp
For dressing
White Butter                             1 tbsp
Walnuts chopped                      1 tbsp
Oregano                                   as required
Tomato puree                            1 tsp
Vinegar                                     1 tbsp
Lemon                                      1
Black pepper powder                  to taste
Mint leaves                                to garnish

Method
First cut thin long slices of eggplant.
Boil in water to make them soft.

Now remove on tissue.

Now cross two eggplant slices and place one slice of tomato on cross point.
put tomato slice on eggplant slices
Then place a cheese slice on tomato slice.

Again place one tomato slice above this cheese slice.
Now season it with black pepper powder and required salt.
Then fold both eggplant slices like parcel. Continue the same process to make 4 parcels.

Now melt butter on a pan add walnut and stir and remove in a bowl.

Add tomato puree, vinegar, oregano, black pepper powder and mix well.

Now heat oil on grill tray and roast the eggplant parcel from both sides.

Remove on serving plate.

Pour the prepared walnut mixture on them.

Garnish with mint leaves.
