Nicoise salad

Hi friends, it is a French cuisine, this super salad Niçoise is a composed salad of tomatoes, tuna, hard-boiled eggs and  Niçoise olives dressed with a vinaigrette of beans, spuds, tomatoes and tuna is a sure-fire winner. This is a friendly recipe for a Low diet.
It is served on a plate, platter, or in a bowl with or without a bed of parsley. The tuna can be used as cooked or canned.

Ingredients
Baby (chat) potatoes                  12 (about 650g)
Green beans, topped                  320g   
Eggs                                          4
Extra virgin olive oil                     60ml (1/4 cup)
Red wine vinegar                        1 tablespoon
Dijon mustard                            1 tsp 
Sugar                                         Pinch of
Tuna steaks                               3 (about 250g each)
Baby egg tomatoes, halved         12
Olives                                        100g (2/3 cup 
Fresh continental parsley leaves  1 cup 

Method
Put the potatoes in a saucepan of boiling water and cook for 10 minutes or until just tender. Use a spoon to transfer the potatoes to a chopping board and halve. Now add the beans to the pan and cook for 2-3 minutes or until bright green and tender crisp. Then refresh under cold running water and drain.

Meanwhile, place eggs in a saucepan of cold water and bring to the boil over high heat. Now reduce heat to medium and gently boil for 6-7 minutes. Then drain and cool under cold running water then peel and quarter.

Now whisk together the oil, vinegar, mustard and sugar in a bowl until combined properly. then season it with salt and pepper.

Heat a frying pan over medium-high heat and add tuna then cook for 2-3 minutes each side for medium or until cooked to your liking. Now transfer to a plate. Set aside for 5 minutes to rest then flake the tuna into large pieces.

Now divide the potato, beans, egg, tuna, olives, tomato and parsley evenly among serving bowls. Season it with salt and pepper to serve.
