Hot and sour vegetable soup

hot and sour vegetable soup
A nutritious and tasty soup with only vegetables, without onion and garlic.

Ingredients
Vegetable stock                        3 cups
Ginger finely chopped                1 tbsp
Kaffir lime leaves                       4 nos
Lemon zest                              ½ tsp
Chopped red chilly                     2 nos
Lemon grass stems                   2 nos
Coriander stems fresh                2 nos
Sugar                                       1 tsp
Salt                                          to taste
Black pepper                             to taste
Oil                                            1 tsp
Carrot chopped                          1 no
Green zucchini sliced                 1 no
Baby corn                                 4-5 nos
Mushroom sliced                       8-9 pcs
Lemon juice                              3 tsp
Soya sauce                               1 tsp
Salt                                           to taste

Method
First heat oil in pan, add ginger, chopped red chilli, kaffir lime leaves and stir for a minute.

Now add carrot, zucchini, baby corn, mushroom, coriander stem and lemon grass stem and satue.
add chopped vegetables
Add lemon zest, black pepper, salt and stir.
Now add sugar, lemon juice, soya sauce, stir and add vegetable stock.
Cover and cook for 5-6 minutes or until cook.

Serve hot.
