Egg tarka or dim tarka

Tarka with paratha
Hi friends, tarka is a very testy north Indian dish, now it is famous in all over India and other countries. It is very easy to prepare with easy available ingredients and delicious with roti, paratha, puri. Try and enjoy it.

Ingredients
Green tarka dal                          250 gm
Onion                                       2 medium size
Ginger                                      2 ½ inch
Tomato                                     1 big size
Cumin powder                           1 teaspoon
Turmeric powder                        2 teaspoons
Red chilli powder                       1 teaspoon
Green chilli                                4-5                   
Fenugreek (methi) powder          ½ teaspoon
Coriander leaves                       1 small bunch
Salt                                          to taste
Sugar                                       ½ teaspoon
Butter                                       2 cubes
Egg                                          2
Oil                                            2 ½ tablespoons
Method
Soak tarka dal in water for 2-3 hours. In the mean time finely chop onions, tomato and coriander leaves then  make powder of roasted methi and make pest of ginger. Now pour soaked dal in boiling water in cooker and cook it for 4-5 minutes. But it depends on your cooker.

In the mean time take two eggs and whisk it with pinch of salt.

Put ½ tablespoon oil in pan, make it hot then pour egg mixture and make bhujia like in picture. Then keep it in bowl and keep aside.

Now in that same pan put remaining oil make it hot then put chopped onion and fry it till light golden colour. Now add chopped tomato and mix for while then add ginger pest and mix it till oil come out at sides.

Add chilli and turmeric powder and mix it nicely for 2 minutes add a tablespoon of water and again mix it.

Now pour boiled dal in masala and mix it, add egg bhujia,sugar, green chillies and salt and some warm water. Cover and cook for 3-4 minutes.

Add chopped coriander leaves, butter and methi powder mix it and cover for 1 minute.

Tarka is ready to serve with kachori or paratha or roti.
