Chicken salad / open faced chicken salad sandwich

chicken salad/open faced chicken salad sandwich
This recipe has a double life - great as a salad and really scrumptious as a open faced sandwich. Here the salad with  Grilled Chicken with Seasonal Fruit. Very easy to prepare so try it.
 

Ingredients
Chicken breast                          1 no.
Mustard sauce                          1 tsp
Worcestershire sauce                2 tsp
Crushed black peppercorns        to taste
Salt                                          to taste
Oil                                            1 tsp
Chopped pineapple                    1 cup
Red, yellow, green
bell pepper juliennes                  1 cup
Chopped lettuce leaves              5 – 6 nos.
Mayonnaise                              2 tbsp

Method
First slit the chicken breast.

For marinating
Put the chicken breast in mixing bowl, add mustard sauce, Worcestershire sauce, crushed black peppercorns, salt and mix well.

Add oil and keep it for 2 – 3 hrs.

Heat a grill pan and add some oil and place the marinated chicken breast on it.
Roast it from both sides.

Now take another mixing bowl, add chopped pineapple, bell pepper juliennes, chopped lettuce leaves, mayonnaise and mix all well.

Place two toasted crisp bread on serving plate and place lettuce leave on them.

Then add prepared salad on it.

Cut the roasted chicken and place on salad.
Then again add some salad on chicken.

Add crushed black peppercorn on top.
