Chicken On Sugarcane

This is a great, flavorful summer dish, and is even better when served with Rice cubes. This is an aromatic mixture of east- asian herbs and spices with minced chicken. The mixture is cooked on skewers of sugar cane. If using fresh sugarcane, use a paring knife to peel and carefully slice stalks lengthwise into skewers.

Ingredients
Minced chicken                         ½ cup
Bread crumbs                           1 tbsp
Ginger paste                             1 tsp
Lemon juice                              1 tsp
Chopped garlic                          1 tsp
Chopped coriander leaves           1 tsp
Chopped mint leaves                  1 tsp
Chilli flakes                                ½ tsp
Salt                                           to taste
Bread crumbs                            as required
Sugarcane sticks                       5 – 6 nos.
Oil                                            1 ½ tbsp
For sauce
White wine vinegar                     ¼ cup
Chilli flakes                                2 tbsp
Chopped garlic                          1 tbsp
Powdered sugar                        ½ cup
For garnish
Tomato                                     1 no.
Coriander leaves                        as required
Boiled rice cubes                       4 – 5 nos.

Method
Take a mixing bowl, add chicken, bread crumbs, ginger paste, lemon juice, chopped garlic.

Then add chopped coriander, chopped mint leaves, chilli flakes, salt and mix well.

To prepare sauce
Heat a pan, add water, white wine vinegar, chilli flakes, chopped garlic, powdered sugar and cook till it thickens.

Now set the prepared chicken mixture on top of the sugarcane sticks.
Then roll them in a plate of bread crumbs and make some more like this.
Heat oil in a pan, place the chicken sugarcane sticks on it.

Cook them from both sides till golden brown on low flame.

Once cooked, remove them on a plate.

Pour the prepared sauce over them.
To prepare rice cubes
Spread over cooked rice on a plate, after dry cut it in cubes.
Now decorate a plate with banana leaves and place the prepared boiled rice cubes and tomato wedge on it.

Place the ready chicken on sugarcane sticks on plate and garnish with coriander leaves.
