Ricotta Spinach Cheelas

Gram flour pancake with spinach, ricotta cheese filling and served with leek salad.

Ingredients
Gram flour                                 ½ cup
Refined flour                              ½ cup
Turmeric powder                        1 tsp
Red chilli powder                       1 tsp
Salt                                          to taste
Oil                                            1 tsp
For stuffing
Cumin seeds                             ½ tsp
Chopped onion                          2 tbsp
Salt                                          to taste
Finely chopped spinach             1 cup
Grated cottage cheese              ¼ cup
Finely chopped tomato              ¼ cup
Nutmeg powder                         ½ tsp
Black pepper powder                 as required
For salad
Leek                                        ½ cup
Chopped tomatoes                    2 tsp
Ginger                                      1 tsp
Coriander leaves                        2 tsp
Sliced onion                              1tsp
Salt                                          to taste
Oil                                           1 tsp

Method
To prepare batter
Take a mixing bowl, add gram flour, refined flour, turmeric powder, red chilli powder, salt, water and mix well.

Add the oil add let the batter rest.

To prepare stuffing
Within this time heat oil in a pan, add cumin seed, after it crackle add chopped onion and sauté.

Then add salt, finely chopped spinach, grated cottage cheese and mix well.

Add chopped tomato, nutmeg powder, black pepper powder and mix well.

To prepare cheela
Heat a flat pan then pour some prepared batter and spread.

Then add oil and cook from both sides.
Now remove the cheela and half slit it from middle and put the stuffing on.
Then roll it into shape of a cone.

Heat oil in pan and roast it from both sides.

Remove cheela on serving plate.
To prepare salad
In a bowl add leeks, chopped tomato, coriander, sliced onion, salt and olive oil and mix well.

Now place the salad on top of cheela and drizzle olive oil on this.
