achaari arvi paratha |
It
is a tasty paratha with cooked taro root filling.
Ingredients
For
filling
Boiled
taro roots 1 cup
Chopped
onion 1 tbsp
Chopped
green chillies 1 tsp
Chopped
coriander 2 tsp
Red
chilli powder ½ tsp
Salt to
taste
Raw
mango powder ½ tsp
Pickle 1 tbsp
For
dough
Wheat
flour 300 gm
Roasted
cumin powder ½ tsp
Raw
mango powder ½ tsp
Salt to
taste
Butter 1 tsp
Oil 1
tsp
For
serving
Curd ½ cup
Pickle 1 tsp
Spring
onion 1 no
Lemon ½ piece
Tomato 1 wedge
Method
First
chop the taro roots in small pieces.
Heat
oil in a non-stick pan, add chopped onion and sauté.
Add
pickle paste and mix well.

Now
add taro roots, salt and cook on low flame.

Then add chopped coriander leaves and mix well.

Now smash it nicely and keep aside.

For
dough
Take
a mixing bowl, add wheat flour, roasted cumin powder, butter, mango powder,
salt, oil and mix well.
Then
add required water and make dough.
Now
make smalls balls out of the dough and fill with taro root filling.
Then
roll it like a paratha.

Melt
butter in a pan and cook paratha from both sides then remove.

Cut
one spring onion and roast it on the same pan with lemon juice.

Now
cut the paratha and serve hot with spring onion, curd and pickle.
