rice with healthy colourful vegetables.
Ingredients
Basmati
rice 1 ½ cups
Carrots
(1/2 inch pieces) 2 medium
Freanch
beans (1/2 inch pieces) 10
Green
peas (shelled) ¾

Broccoli
(small florets) 6
Red
capsicum (seeded ½ inch pices) 1
Oil 2

Green
cardamoms 4
Cumin
seeds 1
tsp
Onions,
diced 2
large
Green
chillies (finely chopped) 4
Salt to
taste
Tomato
(diced) 1 large
Cashewnuts
(halved and fried) 20
Saffron
(mixed in ¼ cup milk) a few strands
Coriander
leaves (chopped) 2 tbsp
Mint
leaves (chopped) 6
Deep
fried onions 1

Ginger
(cut into thin strips) 2
inch pices
Method
First heat oil in a pan, add green cardamoms
and cumin seeds and sauté till fragrant.

Then add onion, carrot, French beans and stir
well. Add green chillies and green peas and mix well.
Add 3 cups of water and salt and stir, cover
and cook for 2 – 3 minutes.
Now add rice and stir, then add tomato and
cashew nuts and mix well and continue cooking.

Then add saffron milk, coriander leaves and
mint leaves and stir to mix well.

Add fried onions and mix lightly, then cover
and cook on low heat for 5 minutes.

Open cover, add broccoli and red capsicum,
mix lightly.
Cover and cook on medium heat until the vegetables
and rice are cooked.
Serve hot garnished with ginger strips and
remaining fried onions.
