Thandai
ke vadey is a special sweet dish in holi. It is a cottage cheese ball stuffed with
flevoured mawa.
Ingredients
Cottage
cheese 500 gm
Fennel
powder 1 – 2 tsp
Dry
mango powder 2 tsp
Fennel
seed 1 tsp
Poppy
seeds soaked in
warm
water 7 – 8
tsp
Dry
rose petals ½ cup
Corn
flour as
required
For
filling
Mawa 3
tbsp
Orange
colour 1 tsp
Melon
seeds 2 – 3 tsp
Almond
finely chopped 1 – 2 tsp
Cashew
nuts finely chopped 1 – 2 tsp
Kewda
essence 2 tsp
Rose
water 2 tsp
Milk 2
tbsp
Method
Take
a bowl, add grated cottage cheese, fennel powder, dry mango powder, fennel
seeds, soaked poppy seeds with its water, dried rose petals and mix well.

Then
for binding, add corn flour. Check it is enough for proper binding or not. Keep
it aside.

For
filling
Now
take a another bowl, add mawa, orange colour, melon seeds, almonds, cashew
nuts, kewda essence, rose water, milk and prepare a filling.

Heat
oil in a pan.
Now
make small balls from cottage cheese mixture and stuff mawa filling in the
balls.

Then
coat the stuffed balls with corn flour for better binding.
Fry
them in oil for 3 – 4 minutes on low flame.

Remove on tissue paper.

Now
cut the balls in half, place on serving plate and garnish the vadas with dried
rose petals, cashew nuts, almonds, fennel-cardamom powder and saffron flavoured
sugar syrup.
