Saunf and elaichi thandai

Thandai is traditionally associated with festivals like Mahashivratri and Holi. Here the Thandai is a chilled saunf cardamom flavoured beverage and is terrific for when the tempratures soar.

Ingredients
Cardamom seeds                      2 - 3 tbsp
Fennel seeds                            3 tbsp
Milk                                          2 cup
Saffron strands                          1 tsp
Fennel and cardamom powder    2 tbsp
Saffron soaked in milk               1 cup
Sunflower seeds                        3 tbsp
Finely chopped almonds            3 tbsp
Finely chopped cashew nuts      3 tbsp
Finely chopped pistachios          2 - 3 tbsp
Whole cloves                            20 - 25
Raisins                                     1 ½ tbsp
Sugar                                       4 tbsp
Crushed ice                               as required 
Water                                        as required 
For garnish
Prepared concentrate
Blanched almonds

Method
Heat water in a saucepan, add cardamom and fennel seeds to boil for 15 - 20 minutes.

Meanwhile, take milk in a different pan, put saffron strands in it.

Add fennel and cardamom powder for flavour and move it.

When milk is slighty hot add saffron soaked in milk, move it.

Now remove the water, fennel and cardamom seeds from gas and to make concentrate add sunflower seeds.

Then add finely chopped almonds, cashew nuts, and pistachios. Also add raisins, cloves, sugar and mix well.

Put in a blender and blend until the nuts and spices are reduced to a smooth texture.

Remove mixture into a bowl.

Now add crushed ice in the milk to cool it after removing it from the flame.

Take a long glass and put crushed ice in the glass as well.

Also add concentrate in the glass and pour the saffron milk from top.

Place concentrate on top of the milk and garnish it with blenched almonds.

Your Saunf Aur Eilaichi Thandai is ready to serve.
