Poached eggs with greens

poached egg with greens
It is a healthy dish with egg, spinach and muffin.

Ingredients
Eggs                                        2
Vinegar                                    2 - 3 tsp
Muffins                                     2
Butter                                      1 - 2 tsp
For filling 
Butter                                      2 tbsp
Blanched spinach leaves           ½ bunch
Smoked cooked chicken ham    2-3
Salt                                          to taste
For sauce 
Egg yolk                                  1
Caster sugar                             ½ tsp
Black peppercorns                     7 -10
Cream                                      1 tsp
Salt                                          to taste 
For garnish 
Cherry tomatoes                       as required

Method
To prepare poached eggs
First boil water in a pan, add vinegar. 
Crack one egg and pour into this water and similarly add one more egg.

Remove the poached eggs on a plate.
To prepare the filling
Heat butter on a pan, tear the smoked cooked chicken ham and add to it then add chopped blanched spinach leaves and mix well.

Then add salt and remove the filling in a bowl.
Now slice the muffins from the centre. 
Heat butter on a pan and toast the muffins. Once they are ready remove them.

To prepare the sauce
Separate the egg yolk in a bowl.
Beat the mixture over the steam and add caster sugar, black peppercorns, cream, salt and beat it again. 
On a plate place the toasted muffins at bottom. Add filling to it.

Then place the poached egg on it and add the prepared sauce over it.

Place the muffin top.

Put cherry tomatoes on skewers and place it on the sandwich.

Poached eggs with greens are ready to serve.
