Mushroom soup

It is very healthy soup with full of protean and fiber.

Ingredients
Butter                                       2 tbsp
Chopped shallots (small onion)   ½ cup
Mushroom slices                       1 ½ cup
Lemon juice                              1 tsp
Black pepper powder                  to taste 
Bay leaves                                2
Vegetable stock                        1 ½ cup 
Cornstarch                                2 tsp 
Cream                                      3 tbsp
Salt                                          to taste 
Chopped onions                        2 tbsp
For garnish 
Chopped coriander                    as required 
Soya sauce                              as required 
Mushroom slice                        1

Method
Heat butter on a pan, add chopped shallots and stir, add mushroom slices, lemon juice, black pepper powder, bay leaves and sauté well.

Now add vegetable stock and let it boil.

In a bowl mix cornstarch with water and add it to the pan.

In the mean time finely chop the sliced left mushrooms.

Remove the bay leaves from the pan.

Then pour the pan mixture in the grinder and make a smooth mixture.
Now strain the mixture and put it in a bowl.

Now for making soup pour the strained mixture into pan, add cream, black pepper powder, salt, finely chopped mushrooms, chopped onions and mix well.

Remove the soup in a serving bowl and garnish with the chopped coriander.

Serve with soya sauce and decorate the bowl with the mushroom slice.
