Chilli tofu, mushroom and pak choy

Chilli tofu, mushroom and pak choy
Paneer dish with mushroom and pakchoy is a very healthy and tasty dish and easy to prepare.

Ingredients
Tofu                                         80 gm
Pak choy                                  2 leaf
Mushrooms halves/quarters       50 gm
Green chilli                               1 no
Green chilli vinaigrette                1 tbsp
Garlic chopped                          ½ tsp
Dark soy sauce                         ½ tsp
Ginger juliennes                         5-6
Sesame oil                                1 tsp
Green chilli sauce                     ½ tsp

Method
Heat sesame oil in pan, add chopped garlic, chillies and mushrooms quarters/halves and stir fry over medium to high flame. In this stage the mushroom shall leave its moisture and generally soften a bit but the crunch needs to remain.

Chop the pak choy

Add soy sauce and blend in pakchoy and tofu, wok toss it.

Now add seasoning and chilli vinegar, chilli sauce, sesame seeds and ginger juliennes and toss.

Let the entire vegetable blend in evenly with the mixture and there needs to be a nice crunch and bit in the vegetables.
