Carrot and coconut lapsi

Carrot and coconut lapsi
Here the lapsi is serving with carrots, which is full of vitamin.

Ingredients
Ghee                                        2-3 tbsp
Broken wheat (dalia)                  ½ cup
Grated carrot                             ½ cup
Grated coconut                         ¼ cup
Coconut milk                             1 cup
Sugar                                       3 tbsp
For garnish
Sliced carrot                             1 no
Sliced coconut                          ½ cup
Cardamom powder                    ½ tsp
Coconut milk                            1 tbsp
Pistachio slivers & almond         as required
Mint leaves                               1 spring

Method
For lapsi
First take a pan and add ghee and heat it.
Then add the broken wheat and pan roast till it turns golden brown
Add grated coconut and keep pan roasting.
Then add some water, coconut milk, grated carrot and sugar.

Now cover the pan with a lid and let it cook for 5 minutes.
To garnish
Peel a carrot into long and thin slices, cut the coconut into small thin slices.

Put them in a bowl and add cardamom powder, coconut milk and mint leaves and mix well.
Now on serving plate, take a ring mould and fill it with lapsi mix.

Top the round lapsi with the garnish mix, mint spring and sprinkle with pistachio slivers and almonds.
