Rasgulla chat

It is a summer special dish with homemade rasgulla without sugar.

Ingredients
Milk                                          1liter
Black cardamom                       1 no
Bay leaf                                    1 no.
Cinnamon                                 1 no
Star anise                                 1 no
Black pepper                             3-4 no
Green cardamom                       1 no
Mace                                        1 no
Soaked kesar                            2 tsp
Boiled mashed potato                1 tbsp
Chat masala                              ¼ tsp
Salt                                           to taste
Red chilli powder                        ¼ tsp
For garnish
Green chutney
Tamarind chutney
Curd

Method
First prepare the chena out of the milk.
Then boil water in a pan. On a cloth put bay leaf, black cardamom, green cardamom and mace then bind and add to boil water.
Take a bowl, add chena and kesar, roll out small balls in shape of rasgulla.

Put the rasgulla in same boiling water. Cook until soft. Then remove and keep aside. This boiled water with masala can be used in polao or any curry so keep it aside.

Now take another bowl, add potato, chat masala, salt and red chilli powder, mix it well and prepare it in shapes of tikkis.

Now place the tikki on serving plate garnish with green chutney, tamarind chutney.

Put boiled rasgulla on tikki. Again garnish with green chutney, tamarind chutney, curd, sev, chat masala and pomegranate seeds.
